Ingredients

  • 1 1/4 cus self-rising cornmeal mix
  • 1 1/4 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 cup milk
  • 2 large eggs, slightly beaten
  • 1/4 cup (1/2 stick) butter, melted
  • 1 (15.25 ounce) can corn, drained
  • Vegetable oil, for frying

Directions

Heat oil to 325 degrees F.

In a medium bowl, combine cornmeal mix, flour, sugar, and salt. In a small bowl, combine milk and eggs. Add milk mixture to cornmeal mixture, stirring well. Stir in butter and corn.

Pour oil to a depth of 2 inches in a Dutch oven, or use a deep-fryer. Drop by tablespoons into hot oil. Cook 2 to 4 minutes, or until golden, turning once. Drain on paper towels.

    My cousin used to have a restaraunt and they made these as a dessert. They coated them with powdered sugar as soon as they... came out of the fryer. The powdered sugar melts onto it and is like a glaze. It was delicious!Read more

    I made these corn fritters earlier tonight to go along with a fried fish and mac & cheese dinner and they were very well... received. Like an earlier reviewer said I did find the batter to be a significantly looser than it appeared on the show making it quite impossible to shape the fritters as seen on TV. Still, with a little careful handling I was able to spoon them into the oil and still get reasonably good results. Not quite what I was expecting, but nothing that couldn't be managed. Sprinkled them with a bit of salt fresh out of the fryer and they tasted very good. Definitely recommended.Read more

    This is the best corn fritters ever and they are NOT hushpuppies! Hushpuppies are made with onion and a dash of sage! Same... basic recipe but without the corn. Add jalepenos to make them Texas style [either hushpuppies or corn fritters] and enjoy!!Read more
