    I loved these, but had to Texas them up!

    Add 1 cup of shredded cheese
    1 small can Jalapenos, chopped
    1/4 cup mined onion

    Thanks for the recipe, they were fabulous, the whole family just loved them.

    I too thought that the ratio of breading to the corn was off. It was more like eating a hush puppy or even cornbread with corn added. Once these cooled off, they weren't very good. So, if you make these, eat 'em quickly because you'll have to toss them later. These don't reheat very well but are easy to make. I probably won't make this again.

    These reminded me of the corn pancakes that my Uncle Eric used to make when I would stay the night with him and my cousins. They're very easy to make. They taste like cornbread, but with a much softer texture. My husband hates cornbread because of the texture but once he started eating these he couldn't stop. It's instant addiction. They're easy to reheat in the oven too and give it a nice crisp bite to it.

    My Grandma used to make corn fritters when I was a little girl. We used to pour hot maple syrup over them that my Grandpa made from his maple trees. Alot of fond memories!

    Love Paula's corn fritters, but I might suggest that she add 1/4 cup finely chopped (minced onion to the batter; makes great fritters even better.

    I am completely sold on your recipes! This show was wonderful ! I will be making this for my family soon. Please stay on T.V. I really didn't watch the cooking network very much until I discovered you.By the way, my family is originally from Tenn. Hugs, Julia Kendall
