Ingredients

  • 1 head iceburg lettuce, washed, patted dry, and torn into pieces
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced celery
  • 1 cup frozen green peas, thawed, uncooked
  • 2 (8-ounce) cans sliced water chestnuts
  • 3 bananas, sliced, tossed in 1/4 cup lemon juice
  • 3/4 cup raisins
  • 3/4 cup chopped nuts (pecans, walnuts, or salted peanuts)
  • 1 cup grated Cheddar
  • 3/4 cup chopped green onions, green part only
  • 10 to 12 slices bacon, cooked until crisp, chopped

Dressing:

  • 2 cups mayonnaise
  • 1/4 cup sugar
  • 1 tablespoon white vinegar

Directions

In a large rectangular dish, layer salad ingredients in the order listed, stopping after the nuts. Mix dressing ingredients and let stand for 5 minutes. Spread dressing over entire top of salad, covering it completely. Sprinkle cheese, green onions, and bacon over salad. Refrigerate for 3 to 4 hours before serving.

    This is THE BEST recipe. I know the bananas sound weird but it works. I saw Paula make this on her show, I wrote it down, made it and lost the recipe. I got absolute raves on it. I couldnt find the recipe on the website so thank you for printing it again!

    I bought all the ingredients to make this salad, then when I got home and started putting it together, I kept double-checking everything I put into it (Bananas? Are you SURE about this, Paula Deen?. Well, the moral of the story is: Don't doubt Paula Deen, y'all. :

    This salad is a really nice mix of sweet and savory. I omitted the water chestnuts (because my boyfriend hates them for some reason and I used almonds instead of any of the nuts listed above. I made mine a little too sweet for my taste, so I might cut out some of the sugar next time.

    I'm going to give this one three stars because all the bacon, sugar and those TWO CUPS of mayo really ruin the healthiness factor of this salad. I'm also giving it three stars because it went bad VERY quickly. After leaving it in the fridge, the next day the salad way so wilted and just didn't hold up well.

    But I do give it credit for tasting yummy when I first made it. It was very heavy, and very sweet, but the banana slices, the pecans, salty bacon and cheesy cheddar along with the crunch from the lettuce went together real nice!
