    I was afraid that I wouldn't like this recipe, since it called for creamed corn. I was afraid that it would be too sweet, and I HATE sweet cornbread :. However, it wasn't too sweet at all. I added chopped green onion, put in 1/4 t. of the pepper, and used the cheese. Wonderful with stew, soup, beans, or just by itself. YUMMY.

    I LOVE this as does my family! In my area, I cannot get frozen creamed corn, so unfortunately, I have to make my own. Despite the extra steps, it is well worth it. I have even altered the recipe for various reasons, and it's still delish. Adults seem to really like the cayenne pepper- kids, not so much. Unlike some others, I do NOT like sweet cornbread which is more like corn muffins. This is the same taste I remember from my childhood, only BETTER!!!

    If you follow this recipe correctly *it is essential to cook cornbread in an iron skillet*, then this will be the BEST CORNBREAD you have ever tasted. It is crisp on the outside and perfectly moist on the inside. I would recommend adding a little extra cayenne for a kick, and although it says the cheese is 'optional', you should add it!

    Never made cornbread before and had to do it perfectly so I borrowed a cast iron skillet. It was so easy and so awesome! I even found the frozen creamed corn (Meijer and I used the cayenne pepper. My guests were so impressed: bread was moist, but not too moist with a nice crispy bottom! I liked it a lot, will make again sans the cayenne : Oh, and the creamed corn I found in the frozen isle had whole kernels in it, next time I will run them through my mini-prep processor to puree a bit first.

    Paula, I am dissapointed! This is my first recipe I've tried of yours and I am sad to say I couldn'd even finish a piece! I was in charge of a cornbread recipe for my work Christmas party and thought it sounded delicious. I am sad to say I'm embarrassed to bring it to share. I followed the recipe to a t.....

    Ohhhhh, important, if you like a teeny bit sweet- I added about 1 tbsp of honey and a pinch of sugar.

    Amazing recipe!! Needs a new picture though, the one on this site looks gross. But I have made this recipe a few times and its so delicious. Moist and the cayenne pepper gives it just enough kick without being too hot.

    Made this today for Thanksgiving and it was just ok. Will probably not make it again as no one in my family was crazy about it. Love Paula, but this isn't her best.

    Great recipe!! I have prepared it as stated, as well as with the addition of some sugar like other reviewers have suggested, and both have met with rave reviews! It is so easy and delicious!!

    Very tasty, very easy to mix up. I made them in both mini muffins and reg size muffins. Will make them again!! I did substitute yogurt for the sour cream since that's what we use..>>greek yogurt. They rose nice and baked well.
