I made these for dinner last night and they were excellent. My husband really enjoyed the "tang" the cottage cheese gave them. We can't wait to eat the leftoveres tonight.

Took this to a potluck tonight and
it was a big hit. Lots of folks asked
for the recipe.
One change I made was to saute the onions in butter until they were clear
and then toss them in. I used about 1 cube of butter, but it did not seem
greasy or too fatty. I used really large
russet potatoes.

I FIXED THESE POTATOES FOR MY FAMILY, INSTEAD USING THE COTTAGE CHEESE, I USED SOUR CREAM, AND ONE MINCED GARLIC CLOVE. AND OF COURSE BUTTER! WHAT A GREAT FLAVOR THE GARLIC GAVE TO THE POTATOES. THIS RECIPE IS BETTER THAN THE CREAMED POTATOES I ALWAYS FIXED.

Sure wish I could respond directly to those who leave negative comments. One said, "I followed the recipe exactly..." then said but I used an electric mixer (Paula said don't do this. And, then continued with all the extra things she added. Well, honey, if you're not gonna follow the recipe the way it was presented then you're making up your own recipe and if it doesn't give you the results you expected perhaps the reason is obvious. Frankly, this wasn't expected to be smashed/mashed potatoes... it was what the name implies... cottage potatoes.
Personally, my family thinks it's a nice change from the usual carb side dishes.

It was a great recipe to follow, it was even easy to follow. I added some green beans and cheese along with some extra spices to make it more feelin. I would recommend this recipe to any one single or married with or without kids.

I have fixed these for family gatherings and other occasions and everyone just loves them. No leftovers.
When I have a large getogether this is my favorite potatoe dish. LOVE LOVE LOVE them. Thanks Paula.

This recipe is a winner! It's so easy to make. Saute the onions, sprinkle the top with green onions and cheddar cheese. Everyone will be going back for seconds. I will definitely make this again in the very near future.
