So like my late Daddy's holiday favorite. Only difference was we used the zest of an orange, and the supremes of two oranges, instead of the pineapple. If you go with oranges, use 2 cups of the boiling water. Never could do Thanksgiving or X-Mas without it. Great on a hot summer day too!

My Bunco group loved this recipe - we can't get "unflavored gelatin" around here anymore... I subbed 1/2 pkg cranberry gelatin and it was fine

My mother, who was an "old school" cook used to make a dish like this for our holiday dinners. She would use fresh cranberries and grind them by hand in an old style food grinder. She had the recipe in her head and even though we all, at one time or another helped make it, not one of use had her recipe.
So when I saw this on being made by Paula I knew I'd hit the jackpot.
I made this for our family Christmas dinner this year and everyone loved it. It's a very refreshing addition to any meal and very easy to put together. Of course it brought back fond memories of Mom--it was special--sort of like having her with us.
Thanks Paula and The Food Network!!

It was a nice alternative to cranberry sauce. No one else ate it though. The children do not like cranberry sauce and never try anything that resembles it but I loved it.

I thought this was delicious. I made it in a bowl, then removed the center, just like Paula did on the show. I used cooking spray on the bowl first, but I still had a VERY hard time getting the salad out of the bowl (even after letting it sit at room temp for over an hour. Also, it wasn't easy to serve in slices, it fell apart, so next time I will make it in a pan and layer the topping over it and just cut it into squares to serve it.

I served this at our retirement center for 72 residents and people even asked for triple servings. I will serve this at all our holiday meals from now on.

I made this for our Women's Church Ministry Christmas Party and it was a hit!!!! I used a bundt cake pan which already has a hole in the center and put the "creamy surprise" in the center, it looked like a Christmas Wreath. Thanks,Paula. You are the greatest!!! God bless you.
