Ingredients

  • 1 small onion, diced
  • 2 large pimentos, diced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups chicken stock
  • 1 1/2 cups cream
  • 3/4 cup grated sharp Cheddar
  • 1/2 cup green onions
  • Salt and black pepper
  • Dash cayenne pepper, optional
  • Suggested Serving: your favorite bread or croutons

Directions

In a saucepan, saute onion and pimentos in butter for 5 to 7 minutes. Blend in flour. Add stock and cream. Cook until thick. Add cheese and stir until melted. Add 1/4 cup green onions, salt and pepper, to taste, and cayenne if desired. Garnish with remaining green onions

    This soup was so YUMMY! I added Broccoli too because I was in the mood for Broccoli Cheese Soup! We also doubled the cheeese! The whole family loved it! The only thing I would say is that if you are having this as the main course it definitely will not feed 4. But if having as a soup/sandwich type meal...Its perfect!

    Delicious! I felt it needed almost twice as much cheese, and it takes more than 10 minutes to thicken, but the flavors are just right and it's super easy.

    So DELICIOUS! Sooo easy to prepare, it's deceptive that it would be so good. I have tried hundreds of FN recipes and this is easily one of the best I have tried! Thanks Paula!
