I doubled the recipe, amount turned out great for two people plus a bit left over for lunch the next day. I didnt have pimentos so I used them from a can, about 5 tsp and added them when I added the cream and stock. I used a bit more cheese two, a little less than two cups. Overall very delicious and easy. Croutons were great with it too. Cube some left over bread, drizzle with olive oil and lots of salt, pepper and garlic powder. Cook at 350 til brown. Good!

My husband and I both loved this soup and emailed it to our sons. Went well with bacon/provolone grilled cheese sourdough sandwiches.

You could try cheshire or double glouster (sp? if they have english cheese. Maybe a sharp provolone or fontina but I don't know about the meltability of these. Ask at the cheese shop for ideas. Your so lucky to be in Italy!

I have been loking for a great cheese soup recipe for a while....this is awesome! My fiance said it had a little to much onion...but I love big flavor and though it was great!! Everyone should try this!

I love this recipe, however someone needs to fix this website. It is so slow takes forever to load up and a lot of headings overlap. everyone please send comments so we can have our old website back.

I love this soup. It was really easy to make and tastes deliscious. I love cheese and have tripled the amount the recipe calls for and I added bits of bacon and cheese croutons for added flavor and texture.

LOVE this recipe, I make it all the time! However I just recently moved to Italy and am sad to discover there is no cheddar here! Any suggestions for a different kind of cheese I can use? I know it won't be the same without cheddar, but this soup has become one of my staple comfort-foods and I would love to be able to make some version of it here.

This is one great and easy recipe. But, these are some additions I made. I bought a jar of pimentos and addd two chopped teaspoons instead of the 2 large pimentos. I added 1 teaspoon dry mustard to the flour when it's blended with the onions and butter. And finally, I added almost a 1/4 cup beer and 2 dashes Texas Pete to the finished soup. Now, that made it over the top.

This soup was amazing. I love it and will keep it for a long time. Next time I will probably cook the onions more they were good, but still crunky.

This soup is so good! After reading reviews, I added potatoes, but preferred it without. I did put the soup in a sourdough bread bowl and that was really good. I didn't add pimientos, and it was still awesome soup. I will add it to the list of favorites.
