Huge hit at a birthday brunch! There were a couple of poorly raised attendees who went back for seconds and thirds when others hadn't even been served the first time! I've been asked to bring this again to this year's celebration because everyone loved it.

Everyone loved this recipe too but I would have liked it to have come out a wee bit creamier! I think that next time I might add some half and half, but otherwise it's a keeper!!!!! Oh and I didn't leave enough time to completely thaw the hashbrowns and it still tasted good.

This recipe is amazing! It tastes better then it looks on TV! Super easy to make and no complicated ingredients. My whole family loved it! I will be making it again! There is a reason why Paula Deen is the southern food queen!

I changed this recipe so much I suppose it isn't paula's. But mine is amazing. You don't have to thaw the hashbrowns its a waste of time, they cook the same. I use 1 can of cream of chicken soup, no other soup will even taste right. I use about 4-5 oz of sour cream, that way u can still taste the profile of the potato and it isn't so goopy. And sorry paula but I do not put butter in it because it is way too greasy when u also have all that cheese. Sharp cheeder gives it that great baked cheese taste and no need for potato chip topping, gross. I haven't had one complaint, many compliments and also won over the inlaws! Lol

I leave out the salt and potato chips. Don't bother to grease the dish either. Always a big hit with family and guests. Delicious!

I topped the casserole with Sour Cream and Onion potato chips; the huz said it was the best Funeral Potatoes I had ever made, with one complaint: too salty. I made this recipe again and used mushroom soup and cut the salt down to a half-teaspoon; complaint, too salty. The chips are so salty that when I make this again I will omit the additional salt. One can always add salt at the table if needed. I used my 9 by 13 inch, made in America, pyrex dish and the sides of the casserole browned and did not come out bubbly when finished. Still, it was delicious. Thanks to Paula for the suggestion of allowing the hash browns to thaw before using, that is the trick! otherwise the potatoes come out al dente. Thanks for the tip, Paula. This is an easy dish to make, and a keeper. I cooked my onion in a dutch oven and then just added all the ingredients to the pot so I didn't have to dirty another bowl, and then poured the mix into the casserole dish and baked.

I made this last year for some friends of the family. I doubled the recipe, because my significant thought that it would make a great meal by itself... Scary thought huh? It was sinfully rich, and I wouldn't suggest anyone have it for a meal alone... My daughter complained that it had too much dairy, which had me flabbergasted! She and my significant think that there is no such thing as too much dairy or bacon! So go figure! Must have been a full moon!
I will make this again - probably for family get togethers - so no one complains that I made something too exotic or spicy...
Make this and you wont be disappointed. Just expect leftovers.
