Made this for Easter dinner and it was awesome!!! Made it exactly as written except I put dotts of butter on top of casserole and then the crushed potato chips. Love, love, love the taste and I've got left overs and I'm thinking it would be good cut into squares and fried in butter to make a crisp hash brown pattie. I'll definitely keep this in my recipe file to make again. It was easy and quick and I didn't have to do any slicing or chopping (except for the onion. Thank you Paula.

This is a good solid recipe for brunch or breakfast.
I added 1 4-ounce jar diced pimiento drained, 2 tablespoons Dijon mustard, half tablespoon of fresh chopped rosemary, and doubled the garlic.
Just put cheese on top, no chips.

I made this for a small family Thanksgiving dinner and everyone loved it. However, I did omit the potato chips on top and used crushed seasoned crouton with a little butter drizzled on top during the last few minutes of cooking and I used cram of mushroom soup, as suggested my some other reviewers. I will be making these again, and again, and again! Easy and yummy,

This is great with cream of mushroom soup or cream of chicken soup instead of cream of celery and also some onion soup mix for flavor...yum!

I view Paula Deen's recipes as a guidepost. After adding my own spin to them, they usually turn out fabulous. My spins usually involve going heavy on spices, going easy on salt at first, and using fresh herbs where it makes sense. I threw in a bit of thyme as I browned the onions for this creamy hash brown casserole. Like other reviewers, I topped with cheese to enhance the creaminess factor. Lastly, I added more garlic powder, a bit more soup base, and a bit of spicy steak seasoning. Is that weird? It was scrumptious. In fact, spicy steak seasoning is my secret ingredient to many savory recipes. Oh, and I squeezed the excess water from the thawed hash browns before adding them to the wet mix. My theory, however flawed it may have been, was that a dry hash brown will cling to the wet mix better than a water clogged hash brown. Whatever the case may be, I came out with a super creamy pile of goodness for a great breakfast side.

This was a hit!! All though it was just a bit dry for my taste. Next time I will and I recommend to add some chicken broth/stalk to the potato mix. I did not use the chips either. I just topped with cheddar cheese. I will be making this again!!

i love this recipe but i like to put monterey jack and cheddar cheese its on top instead of chips!
