    Paula's slight tweeking of the traditional hashbrown casserole is a winner. . . not crazy avant garde as to be foreign to most, but updated so it would appeal to modern palates. That is, so long as you adjust the seasoning. I didn't really measure, but probably about 4 t of kosher salt (= 2 1/2 t of table salt?. Potatoes. Need. Lots. Of. Salt. I also added additional pepper (black, cayenne and crushed red and more garlic powder to suit our taste.

    To those who were afraid to use cream of celery soup. Are you serious? Have you ever noticed the nasty pieces in cream of chicken soup? I'm not sure it's even real chicken. Ugh.

    Okay, so it's not fine cuisine. . . but, it sure tastes good.

    I made this dish for a brunch at Christmas and was a hit, the potatoe chips on top gave it the crunch it needed.

    Everybody loved it and always ask for it. I did change it a little bit, instead of the hash browns I cut potatoes in small squares and then boiled them. I just couldn't find the frozen hash browns at my store. It came out delicious!
