    I love butternut squash soups and this is one of my favorites.

    For those of you who have a hard time peeling butternut squash - use a Y-peeler. It's a snap.

    To cut them, use a large knife like a Sankatou knife. It makes the job a lot easier.

    I made this soup for my mom and I for lunch, and we both loved it. It was simple to prepare which is great for me as a busy mom. It was smooth and creamy! Delicious!

    I recently became a fan of squash soup and was a little hesitant on it coming out as good as a restaurant's. Well, this was so easy to make (except for the peeling of the squash... that was quite the feat. The only suggestion I would make would be to not puree it completely, leave it a little bit chunky. It's also really good with sliced almonds on top! **********

    This soup is almost to easy! But it is very tasty. Ms. Paula's recipies are always so easy and you can usually find the everyday ingredients in your supermaket.
