    This is a very good soup - my wife wants it in the rotation. Very easy to prep and takes a little time manipulation well (I hate to blend hot liquids so this sat to cool before and after blending. I woudln;t have thougth of carrots i nthis but there is a sweetness added. Very nice!

    After I pureed this soup, it was still a little thin. I put it back on the stove and reduced it down for about 30 minutes and added some nutmeg. I also served it with homemade croutons on top. Can;t wait to make it again.

    Great recipe!! Used already cubed butternut squash from costco. simple, delicious and satisfying. I sprinkled a little cinnamon on my soup, my husband added pepper and sriracha to his. YUM!

    Wonderful and easy recipe. I loved how easy this soup was to make, especially when I roasted the squash in the oven first. I did add a bit of ginger to the mix, which gave it a little more sweetness. I would highly recommend this recipe!

    "Oh my goodness", the words that came out of my mouth when I put this spoonful of goodness in my mouth!! This is the first "Butternut squash" soup I've had, and boy is it the best! I used just a 1/2 cup (1 stick of butter with half and half instead of what the recipe called for. It is so delicious and so easy to make! My husband isn't a big fan of squash but this soup changed his mind. It was sweet enough for his sweet tooth that he couldn't say no. I paired it with parmesan breadsticks and it was great!

    Perfect for those cold nights when you want comfort food!! This is for sure going in my recipe box!! Thanks Paula!!

    This is an easy & delicious soup. I didn't bother doing a fine dice on the carrots & onions -- just did a rough chop and lightly sauteed them in a little EVOO before adding the other ingredients. I also added some seasonings as suggested by others (a little dried nutmeg & ginger. I made the recipe in my pressure cooker - cooked for 10 minutes at high pressure with quick release. Turned out great!

    I have made this recipe so many times (usually with butternut or acorn squash. Each time I make it for a dinner party, our guests rave about the soup and its flavor. They even have asked to take some home at the end of the evening. The recipe makes plenty and we always have if for leftovers. Our girls even love to eat it! I always garnish it with chive oil and a little feta cheese. It looks fancy and impresses everyone. It goes great with a sweeter wine like a Mascato d?Asti or a German Resling. Thanks for a great recipe Paula!

    This soup is so good and so easy to make. DO NOT even think of omiting the butter at the end while in the blender. It adds such a smoothness to the soup you won't believe it.
