"Paula Dean did it again, with this recipe. I loved it very much! you must follow the recipe too get the best result. I subsituted the nutmeg for cinnamon and added a little white sugar in the batter just to make it a little sweet. I all so did the filing with fresh fruit, strawberrys and bannas i sauted the fruit in some cinnamon and a little brown sugar and butter. I was afraid at frist of the lumps in the batter after i mixed it, it came out perfect after i had put it in a nonstick pan with a little butter for tast; use a little butter or spray as possible it will work, out fine all you need is a little for this recipe this a easy recipe to make. All creps is a french thiner pancake that you can put different kinds of filling in it to make it your own that's all. " WOW THIS RECIPE WAS GREAT!. Thank you Paula Dean. Form Patty.

Crepes were very greasy and hard to handle. Too much butter. I would definitely add sugar next time.

We have made regular crepes a lot, so we thought we'd try something different. Made this recipe as directed. A few suggestions: mix in a blender - eliminates the lumps. Did a test crepe, which as everyone else here has said was too bitter. Added 2 tsps of sugar and 1 tsp of vanilla. Big improvement. With all the butter in them, it makes a VERY delicate crepe - next to impossible to flip. Use a crepe pan if you have one. We added a very light spray of extra virgin olive oil to make it easier (didn't want anymore butter. We had to make them thicker than our usual crepes just to flip them, even then most of them tore. It is an "okay" recipe... don't know if we'll make them again.

    GREAT, WITH MODIFICATIONS!!
I read all the reviews prior to cooking, and made adjustments to the recipe. I did use the cocoa. I cut the butter to 3T, and used cooking spray in the pan. I used 3/4 c milk and just under 2/3 c cold brewed coffee (in place of water, as one reviewer suggested. Lastly I added 2T sugar. They came out great!! I filled with fresh strawberries and a dollop of whipped cream. The batter was lumpy but they cooked up fine. Delish!!

    These crepes were great!
I didn`t use as much butter because people were saying they were too greasy. I also used about a tablespoon and a half of sugar to make them sweeter. I filled them with raspberry jam and powdered sugar. I will make these again. =

I loved them! I have to agree with everyone, there was too much butter. I thouht they would be a little lighter, because they were just greasy, but they were pretty light. What I did is I used a whole 1/4 cup of batter, and they came out kind of thick. So, I added less than 1/4 cup of batter and they turned out nice and thin. Next time, I know now to add less butter, and I will make sure to try the cinnamon, vanilla and sugar!

I made this recipe but did not add the butter to the batter, only mixing the eggs, milk and flour together. I then melted butter and brushed it on my pan before adding the batter to the pan each time.
They came out great. Took the suggestion from another review and added cinnamon, sugar and vanilla to the batter--they were delicious.I served them the day after Thanksgiving everyone loved them, very holiday tasting with the vanilla and cinnamon.
