This is an excellent recipe! I never have buttermilk so I made my own. I let the onion rings set in the buttermilk for 4 hours, added the egg then did the dredging process. I also added some chipotle powder to the dry mixture.

Taste delic! Had trouble with the saltines & flour not sticking to the buttermilk batter.... and onion. I did use a powdered buttermilk, because i do not always have fresh buttermilk handy. Maybe it is thinny mixing the canned powdered buttermilk then using fresh store bought. Very lite batter tough and I fried what i needed in a cast iron skillet. Worked great. Next time i will try using fresh buttermilk and cut back on the flour to 3/4 cup or less.

yummy! altho i hate changing ingredients, i should mention tho that i sliced them thinner than what paula did on the show, i also used low fat milk instead of buttermilk and added 1 teaspoon of paprika powder to the dry mix...

Finally, after 60 years, an onion ring I can make. This is definitely a keeper. This sauce is also wonderful but I did use 1 and 1/2 chipotle peppers. Just covered the skillet because we have already planned to make them again in a couple of days.

Great recipe. However, I did the double dip to thicken the breading. A single dip didn't give me enough coating. I also added some panko to up crunch factor.

I love this recipe, its the best one yet, for making onion rings, the buttermilk and egg really make the breading stick to the onion during the frying. It's the best . Thanks Paula.
