    EASY AND DELICIOUS! I made this during the week when everyone's pressed for time. It was so easy and so tasty. Both my husband and two boys LOVED - and they are not spinach fans. I didn't change the recipe, but will try other suggestions, like adding garlic, the next time.

    This is truly an awesome recipe. I never did like the crust on quiche, so I was ready to make this immediatly! WOW the best Paula!!! I made it again for our Saturday breakfast, had no cottage cheese or spinach, so I added 1 cup shredded motz. cheese, 1/2 cup buttermilk, substituted 4 cheese shredded mex. cheese from Costco (instead of the 2 c. of cheddar cheese instead of spinach, I blanched chopped broccoli for 5 min, and then cooled it in cold water, then added crim. mushrooms 1 c. chopped or more Also cut down on the salt, only added 1/2 tea.salt. It was spectacular!! We ate it hot, absolutly delish! Thank you so much for your great recipes Paula!

    LOVE IT!! Paula Deen rocks!! Love the ideas to tweek it and make it your own. I made it just how the recipe said, and loved it! I couldn't let it cool either:

    OUTSTANDING ! That is all that needs to be said, however, I will say more. I made this for brunch for myself and my husband, and we both loved it! This dish is easy to put together and WOW was it worth the wait when it came out of the oven. I did as other viewers recommended and cooked it for about 55 minutes. You don't even miss the crust at all, because the spinach and cheeses in the quiche are so savory! I will be making this next week for our ladies bible study and I can't wait to hear how much they will enjoy it! You can't miss with this one! ! !

    This is a keeper! Can't beat the simplicity. I used my food processor to get it extra smooth. Made no changes at all except to reduced fat (2% versions of the sour cream, shredded cheese and cottage cheese. One thing I noted is that it seemed a little salty. While I didn't read the packages, I'm betting it has to do with the reduced fat items being higher in sodium to make up for the lack of fat/flavor. In any event, it was fine... Great!... and I will be working it into the rotation (& leaving out the added salt once a month or so.

    My husband is really into spinach these days so we gave this recipe a whirl. I took some other posters advice and grated in half a shallot and a clove of garlic. I also baked it for an hour. It came out perfect, but the garlic was a bit much. Perhaps next time I will only do the shallot and no garlic or just half a clove. I do use a handheld zester to grate the shallot and garlic so there are no large pieces. I will also do bacon next time. It is a great base recipe with endless possibilities.

    Very rich and filling so you would only want a small piece. We cooked in a 7x11 pan for 40 minutes and came out perfectly. Used shredded cheddar instead of grated which worked well also. More of a spinach/cheese casserole than a quiche.

    I was glad I read other reviews before making this dish. I added 3 Tbsp minced onion and 6 strips of fried crumbled bacon. Also increased the baking time to 70 minutes. It was deeelicious! You really do not miss the crust. So good. My husband and I ate the whole thing. Can't wait to make it again!
