This was the perfect salad for Easter! I substituted crumbled feta for the goat cheese and put it on top (Paula does not put it on the bottom in the episode I watched. My neighbor asked for the recipe--high compliment from someone who is an outstanding cook!

I omitted the goat cheese (although feta would be good I think and used garlic wine vinegar instead and added plenty of salt. Very tasty!

I loved this recipe but have a few suggestions for anybody who wants to try it (1 I added Greek black olives to the recipe and feel it really added flavor, and (2 the next time I make it, and there will be a next time, I will add the tomatoes last. This will help them from losing the tomato consistency.

Raves around the table on Easter about this new salad I tried on everyone. I prefer Feta over Goat Cheese so I substituted that and added it to the top just before serving. Don't mix it in. I thought cherry tomatoes, cut into would look and taste better and sure enough they did. Make sure to slice the cucumber nice and thin. Toss the vinegar and oil in the blender and pour it over the salad, let it marinate in the frig for at least an hour before serving. Thanks again Paula, I'm making it again for dinner tonight.

I made the salad for Easter dinner. I left out the mint and added Mozzerella chesse. My family loved it. Very easy to make.

I made this salad to go with our Easter Lamb dinner. I cannot discribe what a hit it made. It was absolutely delicious. The only change I made was switching the goat cheese for FRESH mozarella. THANK YOU PAULA!!!!!!!

I've had variations of this salad all my life...the Mint and Goat Cheese REALLY makes it! It went so nice with my Leg of Lamb....very refreshing when using spicy morrocan or indian style lamb

WARNING, Disaster Recipe! I tried this recipe and it was a waste of money and time during the Easter holiday. Looks nothing like the picture! I used fresh goat cheese (the kind in the 10oz wrapper in the cheese section of the grocer with months left to expiration and it all pretty much turned to liquid after blending in the tomatoes and cucumbers. I thought this sounded funny to put the cheese in first and sure enough I was correct. Paula needs to redo the directions on this one. The pile of mush this salad became tasted good, but looks like some kind of mayonaise salad. I'm bringing it to Easter anyway to show my good faith effort though.
