Deep Fried Mac and Cheese

Ingredients
  • Peanut oil, for frying
  • 1 recipe "The Lady's Cheesy Mac" prepared, chilled in the refrigerator overnight, and cut into 15 bite-sized squares, recipe follows
  • Flour, for dredging
  • 1 egg, beaten
  • Plain bread crumbs, for dredging
  • "The Lady's Cheesy Mac":
  • 4 cups cooked elbow macaroni, drained
  • 2 cups grated Cheddar
  • 3 eggs, beaten
  • 1/2 cup sour cream
  • 4 tablespoons butter, cut into pieces
  • 1/2 teaspoon salt
  • 1 cup milk
Directions

Heat 2 inches of oil in a large, heavy Dutch oven to 350 degrees F.

Dredge each Cheesy Mac square in flour, then egg, and then bread crumbs to coat. Fry for about 1 minute on each side until golden brown. Drain on paper towels before serving.

"The Lady's Cheesy Mac":

Preheat oven to 350 degrees F.

Once you have the macaroni cooked and drained, place in a large bowl and while still hot, add the Cheddar. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes. Top with additional cheese, if desired.

these came amazingly delicious. I used boxed mac and cheese for my 1st attempt but followed the recipe for frying etc. Next I'll definitely twist it up a little. Gotta request for these for Christmas with our kids again this year. I did them last year and had to fight for just one! The kids all stand around waiting for them to come out of the deep fryer. YES, they get their mouths burnt but they are grown kids. Two things I do differently 1: I wrap each mac square in thin baccon 2: I use crush wheat crakers instead of bread crumbs. These are a REALLY good...a total Guilty pleasure. Definitely a dish you make "once in a while" and probably for a crowd because you can feel your arteries take a hit while you munch on these delicious crunchy delightful bites....My mom who is trying to eat healthier unfortunately wouldn't touch them though... Good morning, Paula! I couldn't sleep so got up, hungry of course, and took out the leftover mac and cheese. I knew it was going to be good but not just good...mighty good. I grew up in Louisiana and never cared for boudin. Then married and lived away, all over the world. Came back and someone mentioned Boudin Balls. I tried. So, this early moring I had a good chuckle. They do boudin same as you do the macaroni. Loved both. Now, can serve a platter of something round (Boudin Balls) and something sort of square (mac and cheese) and won't that look fine on the platter. Boudin Balls are great dipped in Ranch dressing and sure that the mac and cheese will be too. Thanks for a great idea and tastes so good. I had contemplated making these as little bit sized appetizers for my new years eve party, but never got around to it. Well with some leftover mac and cheese from Superbowl, I decided to make a few squares with what I had left to try out the recipe. I made little one-inch cubes so the frying time took seconds as opposed to a minute, but how delicious were these little bites of heaven. And small little bites don't make me feel as guilty. I decided to make this for a holiday dinner to be different and decadent. And it was! The crowd loved it. I made filet mignon steaks and some green beans with toasted almond slices with this. One thing to note is that it is much more time consuming than what the recipe says to cook this. I used Breton crackers in the crust. I made the ones on her show that she wrapped in bacon. I was SO excited to make these because my husband and I love: Bacon, Mac N Cheese, and deep fried food lol but it was horrible! first of all yes it was a COMPLETE mess to make. my kitchen got trashed. it was terrible. then i made them, and they were nice and crunchy and golden brown BUT the bacon was not cooked. they were hot all the way through but a few minutes wasnt enough time for the bacon to cook and if you leave them in longer they burn. then there was no flavor. It just wasnt really worth the trouble at all. I gave it two stars because it didnt taste nasty, just really no flavor. To the negative reviewers: your arguments hold up only if this and things like it are eaten all the time--day in and day out. Sure, you could probably eliminate everything like this from your diet--who wants to do that? I don't, and I'm very health conscious. I even eat a little bit of bacon from time to time, in between the grilled chicken and fish! Peanut oil is one of the healthier oils, but you could also use the ultra healthful canola oil for frying (I do). Yes, there's lots of cheese, but a serving is one or--at most--two squares of the entire recipe. I made this and served it with a hefty side of steamed fresh broccoli florets and a glass of good red wine--it was a scrumptious meal. When will I eat it again? Next year maybe, but not today or next week. It was really good comfort food on a chilly late fall night, and I don't feel one single shred of guilt. Did anyone else notice that the ONLY negative reviews are from those who did not even make it...(LOL!) or peope who are apparently "patrolling" the internet for recipes that upset them? If you are so concered about fried food, then no need to click on a recipe involving FRIED mac and cheese...get off your soap box already...many of us know how to workout, and seldom eat food like this, but thanks for your input anyway I think it's time for you to go annoy your family members with your rhetoric. Paula, you're doing a fantastic job of bringing beloved recipes of the South to us in the West and to the rest of our great country. I can appreciate a good comfort food every now and again, even one's with an added twist. I really enjoyed this recipe. Mac and Cheese is an American favorite whether you're health conscious or not, it just is. You can either eat it or not. Your choice. I was skeptical, when I first saw this aired on the Food Network, but with all the left over mac and cheese from Easter, I thought, "what the heck?". Now, I can say that somethings fried, in moderation, are wonderful. Everyone in my family loves this recipe, even the ones (like me) who normally don't like Mac and Cheese. I do make several changes though: 1) I don't fry it 'cause even when I double the recipe, leftovers never survive until morning, if they did I suspect they would likely be eaten for breakfast. 2) I use 50% Sharp Cheddar, and 50% a blend of whatever other cheeses I have on hand (Parmagano Reggiano, Pepper Jack, Provolone, Havarti, Swiss, Etc). 3) I use Heavy Cream instead of Milk in hopes Paula will forgive me for not frying it. :) 4) I use the onion/bacon/garlic/thyme topping from Tyler's Ultimate "Mac 'N Cheese with Bacon and Cheese". My absolute favorite dinner is Macaroni and Cheese. This is an excellent recipe. I do recommend very lean bacon as if you use bacon with more fat, it will not cook up in the short time you are deep frying.
