    My husband loved it sooooo much! He told me not to mess with his baked potato but I did! Lol I loved it too. We used two baked potatoes instead and cut all ingredients in half. Perfecto! Thank you Paula!

    They were great!!! However, I thought the bacon should be optional. I didn't feel it added anything to the potato....they were great without the bacon....for a garnish, I would use a small spring of parsley...I highly recommend everyone making these...in fact will include them on our fourth of July menu.....when we entertain a large group.

    Tried this tonight for the first time. One large baking potatoe is a meal in itself! Absolutely delicious ... this recipe is definitely a keeper and I can't wait to fix this for company.

    Substituted Manchego for cheddar, and the mayonnaise wasn't for me. They're definitely on the heavier side, but they're twice baked potatoes after all. Probably would make a few more changes next time around. Like non-fat Greek yogurt instead of sour cream, and a bit less butter to lighten the load.

    Wow! This recipe is absolutely delicious and my family has now requested that I replace the traditional mashed potatoes with these babies on our Thanksgiving menu and my family loves their mashed potatoes!

    Tried these tonight and they were awesome! Did not use oil on the potatoes just placed them in the oven for about an hour - didn't have any green onions but I did have chives on hand and used tony thatcher creole seasoning instead of cajun seasoning. Added more sour cream after loading them up with all the ingredients I like my potatoes w/ extra sour cream
