Ingredients
  • 1 (1/4-ounce) package active dry yeast
  • 3/4 cup water water (98 to 105 degrees F)
  • 2 1/2 cups plus 1/2 to 1 cup prepared biscuit mix
  • 1 tablespoon sugar
  • 1/4 cup (1/2 stick) melted butter
Directions

Preheat oven to 400 degrees F.

Dissolve the yeast in the water. Put the 2 1/2 cups of biscuit mix in a large bowl; stir in the sugar. Add the yeast mixture, stirring vigorously. Sprinkle the work surface generously with the remaining 1/2 to 1 cup biscuit mix.

Turn the dough out onto the surface and knead well, 15 to 20 times. Shape the dough as desired. (I shape heaping tablespoons of dough into balls). Place on a lightly greased baking sheet, cover with a damp cloth, and let rise in a warm place for 1 hour.

Just before putting into oven, brush rolls with melted butter. Bake for 12 to 15 minutes, or until golden brown. Brush the rolls again with melted butter while they're hot.

If you changed the title of this to "Bisquick Biscuits", it would be more correct. They look like biscuits and they taste like biscuits. It's just as easy to do the drop biscuit recipe off the box. Delicious! I wanted to do a trial run tonight before making these for easter, and my husband already finished all of them. I was worried after reading the review and didn't know what to expect. These are unlike anything I've ever had before. We both couldn't decide if they're more like a biscuit or a dinner roll. When the dough rose it rose sideways instead of vertically, so they were more biscuit shaped, almost more like a fluffy cookie than a dinner roll. However, the inside was just like a dinner roll. I tried these about a week ago and they turned out AWFUL but determined to make them the way they looked on the show I tried them again and am glad I did . So the trick is in the dough .The last 1/2 to 1 cup of bisquick is just to take the "Sticky" out of your dough .Dont try and use ALL the bisquick in that last 1/2 to 1 cup because thats what I did the 1st time around and like I said they were absolutely AWFUL (dough should be bouncy not stiff).Second time around I just used that last cup to like I said take the sticky out of the dough(maybe used 2 tbls. of the extra cup) and stopped there and formed my "rolls" .Leave them to rise the hour ,maybe more depending on the weather mind you as yeast is very snobby to moisture in the air . These were absolutely delicious when correctly made .The lightest bisquit I ever had ,you CAN taste the yeast if done correctly .Paula ,you My dear are a genius for this easy "cheat" for a yeast hankering ...thank you ! item not reviewed by moderator and published
I really diddn't like the taste or consistency of these biscuit/rolls. They left me confused. Are they rolls? Are they biscuits? Even my 13 year old son wouldn't eat them and he would eat out of the garbage if I let him. As another reviewer stated, I read the reviews so I knew what to expect, but gosh, how much of a noob do you have to be to think you can change Bisquick into a yeast roll? The yeast made the biscuits a bit lighter, so I liked the outcome. I have the recipe 4 stars since it does say yeast rolls. I will use two packages of yeast next time to see if the biscuits will be lighter in texture. LOL, who could be upset with Paula Deen? I tried this recipe as directed a while back. it was one of the worst tasting rolls that I have ever had. I have a recipe for yeast rolls which is a 2 day process and I was looking for a "quick" back-up for my recipe in case I am short on time. Just because the recipe calls for the use of some yeast does not make these yeast rolls. They taste and have the same consistancy as buscuits. If you want a roll that actually tastes like a traditional yeast roll don't try these!! item not reviewed by moderator and published
These rolls were heavy as rocks and had very little flavor orther than the biscuit mix. Tried it again. Added more sugar and used milk instead of water. Got a good rise and smelled great, BUT..... still heavy as a rock and not l the yeast roll I was hoping for. Love you Paula but this was a true dissapointment. This is not the best recipe for yeast rolls. It is better just to the take the time and make real dinner rolls the old fashion way. FYI, the chef's do not tell you to let the rolls rise a second time after - makes all the difference. item not reviewed by moderator and published

I used Bisquick baking mix when I made these, and while not disappointed in the results, I was expecting more of a dinner roll texture than a biscuit texture. I shaped them by patting the dough out flat, brushing it lightly with butter and sprinkling a little garlic powder on it. I then rolled it up and cut it crosswise to make pinwheel style rolls and allowed them to rise for an hour. First let me say that I LOVE PAULA! That will not change. But....I didn't like these biscuit/rolls. I would've rated them lower for taste, but my kids liked them and ate them (so not a total waste) and they were incredibly easy to make. I mixed them right in my kitchenaid stand mixer. These rolls were fabulous! I didn't have any biscuit mix on hand so I substituted it for regular flour (needed only 2 to 2 1/4 cups) and they came put perfect. I think the only way you could give this very many stars is if you had never made or tasted homemade yeast rolls. I have made bread, rolls, etc. for years and these were a real disappointment. Be forewarned that these are biscuits, not yeast rolls like you would find on the buffet at Golden Corral. This is a nice alternative to Bisquick biscuits. I mixed mine up in my mixer, and they did great. I also used bread maker yeast, so I added the yeast with the dry ingredients. After I combined the ingredients and let them rise together, it was obvious the dough was too soft to form into balls so I dropped them into greased muffin cups. It made 9 wonderful biscuit muffins!
