  • Cake:
  • 1 (1-pound) box graham crackers
  • 2 (3 1/4-ounce) boxes instant French vanilla pudding
  • 3 1/2 cups milk
  • 1 (8-ounce) container frozen whipped topping, thawed
  • Frosting
  • 1 1/2 cups confectioners' sugar
  • 1/2 cup cocoa
  • 3 tablespoons butter, softened
  • 1/3 cup milk
  • 2 teaspoons light corn syrup
  • 2 teaspoons pure vanilla extract

Butter the bottom of a 13 by 9 by 2-inch pan. Line with whole graham crackers. In bowl of an electric mixer, mix pudding with milk; beat at medium speed for 2 minutes. Fold in whipped topping. Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of pudding layer. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.

For frosting, blend together sugar and cocoa. Add butter and milk, mixing well. Add corn syrup and vanilla. Stir until creamy. Cover cake with frosting and refrigerate for 24 hours.

    This was okay. Mainly I gave it three stars because I did not like the chocolate frosting because it did not blend with the other flavors that well. I would rather have made a ganache to pour on top.
    Very tasty and light. Made this for Mother's Day and it was a huge it. Brought the leftovers to my office and everyone wanted the recipe especially when I told them how easy it was to make!! My store only hade plain vanilla but I do not think it made that much of a difference. Will now being adding this to my "bring a dish" favorites :)
    I've made this many times over the past several years and everyone ALWAYS loves it. Great summertime dessert and super easy to make!
    Taste NOTHING like an eclair cake. S'mores cake yes!
    Made this for my Great-Nephew's 9th birthday. He has already ordered it for next year! The only thing I changed was that I added a layer of sliced bananas on top of the graham crackers before adding the pudding.
    Very easy to make . Its a definite crowd-pleaser . Cant go wrong with party's or kids events . just make sure you let it set up overnight , I know its tempting to dive into early . Just lick the spoon instead lol. 
    This one is a huge hit.Next time though i will use chocolate chips instead of cocoa to make the chocolate sauce.
    I have tried this many times and it's always a big hit with the adults and the kids. It's light and not too sweet. The only change I have made is I use different types of chocolate- dark, German, etc. and make the frosting on a double boiler. Enjoy! 
    My family loved it!! This does taste very much like an actual eclair...only way easier to make!! The hardest part is waiting overnight for the cake to properly chill. Thanks Paula for a new favorite!! 
    I made this for my 4 year old who is allergic to eggs. After reading the reviews it sounds like a good cake to make. Like others have is very sweet and it would be for alot of people. Since it is just myself, my husband, and our son this batch is going to be way too much for us. Next time, i will make half the cake batch and 1/4 of the frosting. but it was son licked the plate.
    This recipe is too sweet!!!! The chocolate frosting was overpowering. If there was half as much frosting this would be an excellent recipe but it was too sweet. If I make this again I would half the recipe for the frosting.
    I made this recipe for a work potluck and it was a hit. It is so simple, at first I was a little intimidated about making my own frosting but it's really easy and turned out better that canned frosting, in my opinion. The best part is that you don't have to bake it so it's fool proof. Very good recipe this will definitely become one of my go to recipes to take places.
    This is an excellent recipe. I do not bake, so this is perfect for me. Not only is it easy, it's delicious!!! Everyone that has tasted it, LOVED it.     I love this recipe I have made it for several gatherings and everyone asks for the recipe. The only thing I do different is I add about 1/2 to 1 cup of cinnamon or french vanilla cool whip to the icing after all the ingredients have been mixed together. It gives the icing a nice texture and flavor!

    This recipe is almost identical to the recipe a Filipino lady from my church used to make if not the same. I was so glad to come across this because I missed having her eclair cake. This is an ultimate favorite in my family..there is nothing negative to say....The only thing I do different is double the frosting so give a nice even coat on the top layer. More chocolate the better...Also if you want to use Soy milk instead of regular milk, you dont need as much as the recipe calls for...maybe only 2-3 cups for the cake part....but pour in slowly to make sure you get that pudding texture.
    Very close if not the same as a recipe I got from my sister in law years ago. We call it eclair pie though. A major comfort food I need to make soon... = YUMMY!
    Good- made it for a superbowl shindig. A couple people had seconds. Super easy and fast dessert to make, which is a huge plus.
    I decided to make this after all the reviews that where posted. As I was making it I did not think it was going to turn out very good or keep a shape. To save time I used store bought chocolate icing. The end result was delicious. I will make it again.
    Soooo good and very easy. Will Make again,and again. Made individual ones for a dinner party garnished with strawberries. Looked elegant. Used can milk chocolate frosting. Yummy,
    Great recipe, but it does not belong to Paula Dean. I've been making this recipe for years. got the recipe from a Louisiana cook book. Sorry Paula, but you shouldn't be taking credit for this one.
    This recipe is amazing and easy! Not to mention it's totally yummy. :D I read that someone on here used white chocolate pudding when they made it, so when I first made it I didn't know which pudding I should use. So I used both! and I was definitely happy with my decision, it was wonderful! I brought this for Thanksgiving at the in-laws and my uncle's house and everyone was extremely happy with it! In the words of my uncle: "It was KILLER!" :
    This really only takes 5 minutes to put together, the first night we ate the desert after only chilling for 12 hours. The only taste difference was the graham crackers where still semi hard. The second day after 24 hours of chilling the graham crackers softened. This is a GREAT, EASY AND FUN desert! THANKS PAULA YOU DID IT AGAIN! GOD BLESS!

    Have made this cake many times!! love it!! recently discovered a white chololate pudding mix, even better than the vanilla
    It's in the fridge now starting its 24-hour refrigeration and it seems weird. I'm sure it's going to taste delicious but I couldn't keep the graham crackers from floating to the top of the pudding and I don't think there was enough frosting. The frosting didn't even cover half of the thing. We'll see how it all looks tomorrow.
    We really enjoyed this. It is so simple, and you get a big bang for your buck!

    I made this for a church gathering. I didn't change anything and it turned out incredible! I do believe that 1 man ate 3/4th's of it by himself!! It was a big hit!
    Absolutely delicious and very easy to make! I will definately be making this again and possibly bringing it to dinner parties.
