Ingredients
  • Cake:
  • 1 (1-pound) box graham crackers
  • 2 (3 1/4-ounce) boxes instant French vanilla pudding
  • 3 1/2 cups milk
  • 1 (8-ounce) container frozen whipped topping, thawed
  • Frosting
  • 1 1/2 cups confectioners' sugar
  • 1/2 cup cocoa
  • 3 tablespoons butter, softened
  • 1/3 cup milk
  • 2 teaspoons light corn syrup
  • 2 teaspoons pure vanilla extract
Directions

Butter the bottom of a 13 by 9 by 2-inch pan. Line with whole graham crackers. In bowl of an electric mixer, mix pudding with milk; beat at medium speed for 2 minutes. Fold in whipped topping. Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of pudding layer. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.

For frosting, blend together sugar and cocoa. Add butter and milk, mixing well. Add corn syrup and vanilla. Stir until creamy. Cover cake with frosting and refrigerate for 24 hours.

I made this for my 4 year old who is allergic to eggs. After reading the reviews it sounds like a good cake to make. Like others have said...it is very sweet and it would be for alot of people. Since it is just myself, my husband, and our son this batch is going to be way too much for us. I made this recipe for a work potluck and it was a hit. It is so simple, at first I was a little intimidated about making my own frosting but it's really easy and turned out better that canned frosting, in my opinion. I love this recipe I have made it for several gatherings and everyone asks for the recipe. The only thing I do different is I add about 1/2 to 1 cup of cinnamon or french vanilla cool whip to the icing after all the ingredients have been mixed together. This recipe is almost identical to the recipe a Filipino lady from my church used to make if not the same. I was so glad to come across this because I missed having her eclair cake. This is an ultimate favorite in my family..there is nothing negative to say....The only thing I do different is double the frosting so give a nice even coat on the top layer. This really only takes 5 minutes to put together, the first night we ate the desert after only chilling for 12 hours. The only taste difference was the graham crackers where still semi hard. It's in the fridge now starting its 24-hour refrigeration and it seems weird. I'm sure it's going to taste delicious but I couldn't keep the graham crackers from floating to the top of the pudding and I don't think there was enough frosting. I have been making this for a very long time. With just one exception...instead of making the chocolate topping from scracth,I use a container of Milk Chocolate frosting. This saves a whole lot of time and fuss. All I have to say is... I made this 9x13 dessert last Friday and my husband and I ate it all by ourselves by the end of the weekend. Really does taste like eclairs! I used just 3 cups milk and I made real whipped cream instead of whipped topping, just be careful folding it in. This is such a treat! I used 1 cup less milk than the pudding instructions said to so I'd have a thicker filling. To keep from having to chill 24 hours, I quickly dip the graham crackers in milk before layering. That softens them up a little - just quickly dip, don't soak them or they will be soggy. Haven't read all the reviews to see if anyone has done this. But I do this all the time as I have made this recipe for years. Instead of making the frosting, just use a container of prepared frosting...chocolate or milk chocolate (Duncan Hines, Betty Crocker). Place it in the microwave for 1 minute. Afterwards you may want to stir it...but then pour it over your graham crackers. It's smooth and good and easy. This is one of those guilty pleasures you want to make again and again... it's not complicated or gourmet, but it's delicious and I wouldn't have any problem serving it to friends. Instead of paula's topping, I made Ina's chocolate ganache (from her chocolate ganache cupcake recipe) - 1/2 cup of cream and 8 oz chocolate chips melted over a double boiler - and while it was rich, it was wonderful.
