    I made these for a friend's baby shower I hosted and everyone loved them. And so, so simple to make.
    My husband had some of the leftovers and I was shocked he loved them, too. (He doesn't usually go for things with cream and mayo.

    The only modification I did was add a tiny bit less mayo. Delicious! Thanks Paula!

    I made these sandwiches for a late night celebration for 100 people and they were a hit! The recipes were so easy that I improvised and made several different variations. I removed the crusts and simply cut the sandwiches in half. People were asking what's in these; I want to make them at home? Do you have any more? Another hit> Thanks Paula Dean.

    I only made the pineapple and cucumber varieties. Cucumber with parsley garnish and pineapple with chopped pecan garnish. They were great and got good feedback on them. Fresh and easy and fun to make the shapes. Perfect for vegetarians. My only recommendation is to leave out small amounts at a time and leave the rest wrapped in saran wrap in the fridge. This will help prevent the crusts from getting stale, I left mine out and they got dry quickly.

    Yesterday I hosted a beautiful tea party to honor a friend. I made these sandwiches, and they were a hit. The only changes I made were to cut some in circles and make some as ribbon sandwiches with two pieces of one bread and one of the other and two different fillings. Also, I sliced the English cucumber, rather than chopping it, and served it open-faced.

    MY DAUGHTER PREPARED THIS LITTLE SANDWICHES FOR A BIRTHDAY PARTY AND EVERYONE LOVED THEM. THE ONLY SUBSTITUTION THAT SHE DID WAS USING THE SOFT CREAM CHEESE, INSTEAD OF THE BLOCK ONE. SHE SAID THAT THEY WERE VERY SIMPLE TO PREPARE. THE RESULTS WERE DELICIOUS!

    I have never gone wrong with one of Paula's recipes. being that I'm from GA, lots of her recipes are exact or alternatives to recipes I grew up on. It's like watching my Mom in the kitchen!
    These are great little sandwiches! But, I am world's worse about playing with a recipe to try new things. So my favorite was when I mixed the drained pineapple & pecans together in the cream cheese & mayo & added a little powdered sugar for sweetness...Oh man, was it ever good!!!! And are such a big hit at showers & parties.
    The olive sandwich is good with a little dry ranch mix poured in the cream cheese mixture & is also good if you swap the bread for a tortilla, roll up, & cut in circles. For an extra oomph, add very thinly sliced deli meat. You can do the same with the cucumber. And for a totally different taste, try dill pickles on bread with plain cream cheese or the cream cheese mixture, but you'll want to pat them dry or squeeze & get juice out so as not to have soggy bread. Yum!!!

    These finger sandwiches are great. My favorite is the cucumber. Me and my family grew up on cucumber sandwiches. We have them for every get-together.

    For my daughters 6th birthday she wanted a princess tea party instead of the traditional birthday party. They were a big hit. I did change the recipe up a bit and added a ham and egg salad sandiwich to the mix along with the cucumber and pineapple. The kids loved them. The best part was my daughter got to help, she cut out the shapes and garanished the sandwichs with bacon and parsley. We will def. be making these again.
