    Made these biscuits tonight. Did not have milk so used hazelnut flavored coffee creamer & omitted the sugar. Wow! These biscuits get a slap-yo-mama thumbs up!!

    I have made these twice. The first time they turned out very well and everyone was pleased. However, for the second go-round I made significant changes. Instead of sweet potato I used an equivalent amount of canned pumpkin as well as 3/4 teaspoon of pumpkin pie spice. I also substituted buttermilk for regular milk. The results were incredible! The biscuits were very light, most and tender, and they were just sweet enough.

    I intend to further experiment using different fruit butters for the sweet potato. I'm also thinking of using yukon gold or russet mashed potatoes instead of sweet potatoes. I'll also do this with and without sugar to see how these differences affect the taste, tenderness and texture of the biscuits. And I'll always use buttermilk. But the base recipe is definitely part of my repertoire, especially for weekend brunches!

    I have made this recipe several times & I love it. We eat them with honey (as Paula recommends or with cinnamon sugar. These are a major hit with my family & are a good way to get my 2 year old to eat some sweet potatoes.

    Sadly, I was not a fan, we couldn't even taste the sweet potato! We had 30 guests, but still had a ton of leftovers....

    These biscuits were a hit at Thanksgiving. A different way to enjoy sweet potatoes. I think next time I make these, I'm going to add a dash of cinnamon and brown sugar.
