Ingredients

  • 4 tablespoons (1/2 stick) butter, melted
  • 2 eggs, beaten
  • 1 tablespoon all-purpose flour
  • 3/4 cup sugar
  • 1 (3 1/2–ounce) can shredded sweetened coconut (about 1 cup)
  • 1 cup milk
  • 1 (9-inch) unbaked pie shell

Directions

Preheat oven to 350 degrees F. In a large bowl, combine melted butter, eggs, flour, sugar, coconut, and milk. Pour into pie shell. Bake until firm, about 45 to 60 minutes.

    This recipe was really great. I did tweak it a little. I added a cup of crushed pineapple, 1/2 cup of dark syrup, and a... tablespoon of vanilla extract. I use a Pillsbury refrigerated crust in a tart plate and cooked the crust in the oven for about 10 minutes before I added the filling. After I filled the crust, I added 15 minutes to the cook time to make sure it was done in the middle the pie and it worked great for me. I know I changed it up a bit but we all have different preferences and this worked. By using a little large pie plate and adding the cook time, it was a little less custardy and browner.... LOVED IT....Read more

    This was the first time I made a coconut pie and the recipe was so easy and delicious. I couldn't find the coconut in a can,... so I used the bag coconut-it worked well. I did add 1 teaspoon of vanilla, as I like the taste of vanilla. My husband loved it, it's his favorite pie.Read more
