Directions
1 cup mayonnaise
1 teaspoon curry powder
1/2 tablespoon fresh lemon juice
1 tablespoon grated onion
Steamed asparagus spears, for dipping
Combine the mayonnaise, curry powder, lemon juice, and onion in a small bowl. Cover with plastic wrap and chill. Cut the bell pepper in half lengthwise, remove the core and seeds and serve the curry dip in pepper "bowls." Serve with asparagus.
Cooks Note: You can also serve the dip with crackers

incredible! This is now one of those recipes I 'have to make' every bbq, and now I've had requests that I make it for Christmas day, too! People that don't like mayo, and/or don't like curry, are always surprised to hear those ingredients, because they love this dip. The bowl is always scraped clean every time. :

This is great quick, appetizer with unique, but well rounded flavors. You could use the dip with most veggies or chips that I can think of but asparagus is definitely an elegant touch.

this is a great & different recipe. it needed to set for a little bit before it really blended in flavors. I added a little lemon juice to cut the mayo heaviness. a real party hit & great with Yakima.
