For a simple recipe very tastey. My husband never ate gator now he ask for it all the the time. Paulas recipes are out of this world.

WON-DER-FUL! This is a recipe I am saving to my recipe box. When my family was in FL we loved gator fritters so when we got the rare opportunity to buy alligator here in Oregon I jumped at the chance. Paula's recipe is perfect! The fritters have an amazing, light, flaky, spicy coating my whole family loved and it is exactly like the ones I was hoping to replicate from Florida. Since I have small kids I reduced the amount of hot sauce and it was still fantastic. I also used this recipe for chicken breast tenderloins and my husband cannot stop raving about them. The kids dipped them both in ranch and I made a spicy garlic aioli dipping sauce with a little horseradish for some kick. AWESOME! Thank you, Food Network!

Not a very spicy recipe, but that can be fixed with some cayenne pepper. Very good when fried extra crispy in lard. Let's face it, this isn't a health snack, so do it up right. Also, tenderloin meat much better than tail or leg meat. More expensive, but very tender gator.

We used 1 lb. of chicken, cut into pieces with this recipe (instead of the gator!!. It was GREAT! It was easy and delicious. I was so happy that I could make something so good at home. My husband loved it too!
