Ingredients
- 1/2 cup (1 stick butter)
- 1 cup packed dark brown sugar
- 1/3 cup heavy cream, or more if necessary
- 1 (16-ounce) box confectioners' sugar
- 1 teaspoon pure vanilla extract
- Your favorite cake recipe
- 1 cup chopped nuts, optional
Directions
To prepare frosting, melt butter in saucepan over medium heat and stir in brown sugar and cream. Bring to a boil, then transfer to a mixing bowl. Add confectioners' sugar and vanilla. Beat with a handheld electric mixer until it reaches a spreading consistency. At this time it may be necessary to add a tablespoon of heavy cream, or more, if frosting gets too thick. Just be sure to add cream in small amounts because you can always "add to," but you can't take away. Frost your cake and sprinkle the top with chopped nuts, if desired.
Cook's Note: To fix "runny icing," add additional powdered sugar until the consistency is right.

I think this would have been a great recipe if I liked or was a fan of brown sugar. It took some time getting consistency as specified because we don't have boxes of powdered sugar in our grocery store, so I had to estimate 16 oz. It would have been easier with a more exact amount. Other than that, it was pretty simple to understand.

I made this icing because I didn't feel like going out and buying duncan hines stuff. Easy to make. I needed the icing for a layer cake (made two 8 or 9 inch rounds and it wasn't enough. I had to make another half batch to get the sides of the cake. Warning: time is of the essence! Put the icing on the cake right away, or it'll start to solidify and won't cover nicely, which may have been the reason I needed to make another half batch. I covered my flaws with untoasted coconut. Bringing it to a party later, hopefully it's a hit!

I wouldnt call this a frosting. I would call it a glaze wut this frosting/glaze has a wonderful flavor and i put it on a lemon cake with lemon pudding in it and it was the best combination ever. In all it is a good recipe.
