    The funnel cake recipes using baking powder are so much fluffier. In using this recipe w/soda, it was helpful to use BUTTERMILK (or make buttermilk out of milk with a tsp. of lemon jc or vinegar. It activates the soda.

    I used self-rising flour and eliminated the salt and baking soda. I had trouble getting the batter to adhere to itself in the fryer plus it would stick to the fryer basket. My second batch I added 1/2 cup more self-rising flour and an additional tablespoon of sugar. I forgot to add the butter. However, with these changes it adhered to itself and did not connect to the fryer basket. Also, it was fluffier and looked just like the funnel cakes at the fair. Also a good tip: I was the official funnel cake maker at a kids carnival party; so I premixed the flour and sugar and stored in Ziplock bags until ready. Just add wet ingredients and you are there! I also used the batter to dip frozen candy bars and fry them. Yum!

    i dont know what some people are doing wrong, but my daughters and i just made some 5 mins ago! MMMMMMMMMMMMMMMMmmmmmmmm!!!!!!!!!!!!!!!!!!!!!!!!! AMAZING. they came out great! easy as pie!
