Ingredients
- 2 tablespoons olive oil
- 3 cloves garlic, smashed
- Two 6-ounce bags fresh spinach
- 1/2 teaspoon lime zest
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Directions
In a large Dutch oven, heat the oil over medium-high heat until hot. Add the garlic and cook until golden brown, about 2 minutes.
Add the spinach and cook, stirring constantly until wilted, about 4 minutes. Stir in the lime zest, salt and pepper. Serve immediately.

Loved this! I will say that I added the juice of the lime that I zested. The lime just makes this dish!

I made this and didn't love it. Just fell flat for me. Maybe some of the suggestions listed would make it better.

Oh my goodness........so delicious. I took advice from others and only added one thing, a sliced shallot while cooking the garlic. I didn't measure my lime zest, just zested a lime and this was pure heaven. Even my picky eaters scarfed this up. Yeah Paula, something delicious and healthy. KEEPER
