Georgia Cracker Salad

  • 1 sleeve saltine crackers
  • 1 large tomato, finely chopped
  • 3 green onions, finely chopped
  • 1 1/2 cups mayonnaise
  • 1 hard boiled egg, finely chopped
  • Salt
  • Freshly ground black pepper

In a medium size bowl, coarsely crush the crackers with your hands - you should have big cracker pieces. Add the remaining ingredients, mix well, and serve immediately. Season, to taste, with salt and pepper.

    My sister made this and it is very, very good. My only complaint is that it is kinda "ugly" looking. So, to serve I would save some tomatoes for the top and maybe slices of hard boiled egg and garnish with some parsley or chives or the onion tops. Maybe add some frozen peas to the salad for some color in the salad. It's "ugly" but its very good.
    I just had this salad at Paula Deen's restaurant in Savannah. I had to ask our waitress the name of it so I could look it up as soon as we got home. YUM!!! Out to the grocery store now to make-up a batch:
    this was very good and very easy! I used Ritz and saltines because I didn't have enough saltines, I like it better with the Ritz! Yummy!!!

    I was looking for something fun and easy to make with my sons for a snack. This was way too easy, but it was delicious! The boys loved smashing the crackers. I didn't add a thing or delete anything. Just followed Paula's recipe as is. Yummy! There wasn't any leftovers! I made fresh lemonade to drink and the combo was great! Thanks, Paula!

    Oh my gosh, this is SO good! I even used a can of drained, Hunts diced tomatoes making the prep even faster and let me tell you, it's down right delicious! However the entire time I was eating it all I could think about was how much better it would be with (real bacon, guess what I'm trying next time I make it! ;- LOL
    2 friends at work told me about this delish recipe. For over a YEAR I ignored their urgings to try thus pure awesomeness. THEY make it MONTHLY to share at their office lunch (I'm nit in their dept. So never got to taste this at those lunches. FINALLY, one of the ladies physically dragged me to their office frig and SHOVED a spoonful at me. 
    OMG my 11 year old & I have made this 3 times in 2 weeks now! In fact we add all ingredients together EXCEPT the crackers and let sit in frig overnight THEN the next day snap a sleeve of crackers into in and a big dollop more of mayo. 
    You'll never make potato salad again with all it's prepping time.  
    Even my neighbors and their 5 year daughter give this recipe "that's YUM" mommy!!  
    Don't be like me.... Don't wait a year to try this.  
    We all add an extra egg to ours. Add or takeaway more or less any of the ingredients you love after tasting it. "Dukes" brand mayo or Helman's really taste super with these ingredients!!!

    I agree with the below post about when first made..not so good but after sitting in the fridge for a couple of hours and then just adding a few fresh crispy crackers it was really a good side dish for our brisket!!! oh and i did add two eggs instead of one and a dash of celery salt....
    Most excellent! I substituted finely chopped Vidalia onions and quartered plumb tomatoes. I also increased the number of boiled eggs, tomatoes and mayonnaise in the recipe. Was still delicious two days later.
    Paula: this is a great substitute recipe for potato based salad, however, I first saw this about 20 years ago on the Justin Wilson cooking show. I believe that his recipe called for some of the normal potato salad ingredients such as finely chopped celery and perhaps diced pickles, olives, etc. I still like the texture of regular potatoe salad, but as Justin would say, " Ay-Eee! Talk about good!"
    Had some Romas on their last day and remembered this recipe. My only problem is not eating the whole thing by myself!
    I'd like to add baby shrimp next time and see how that turns out.
    When I first made this salad this afternoon, I was very disappointed; however, after letting it sit in the refrigerator for several hours, it definitely improved in taste. My husband and I ate it with grilled baby back ribs for supper, and it was very tasty. He seemed to like it a little more than I did, so I'll probably make it again.
    Loved this recipe of her best part it's that you have most of all the staples right at home always ready! I used the 1 1/2 cup light mayo 2 tomatoes and 2 hard boiled eggs left out the onions. Keep in mind yes if you fridge the leftovers you will have soggy crackers BUT it's solved by adding a few fresh in there when you served and you won't noticed the soggy ones at all! I think a great add in is any kind of meat as long as it isn't greasy and to add some veggies for kids add in peas a great plus hidden right in! Go ahead give it a try you won't be sorry. Might sound strange in the beginning but wrap your taste buds around it and you'll never go back!
    I made this salad and added 1/2 cup shredded sharp cheddar cheese and a 4.25 oz. can of white lump meat crab and red pepper to taste. My family just loved it. I also used reduced fat mayo and cut back on this a little. Fantastic.
    This salad was a hit with my family. My teenage grandson, who is a very picky eater got seconds and thirds. I stopped making it because I'm a diabetic and crackers are so high in carbs, not to mention the mayo, which is full of calories. I had forgotten what else went into it except for the crackers, tomato & mayo. I cheat on my diet now and then, and this salad is DEFINITELY WORTH CHEATING FOR! This is definitely a keeper.     I have been making this salad since the first time I saw the recipe on Paula's show...I believe 2004. It's always the first salad bowl emptied on the table. I am having a baby shower for my granddaughter next month and that is the one thing she requested at the luncheon. Chopped red or yellow peppers and shrimp is a nice addition but the original is wonderful just as it is.
    I have made this salad many times and it is always a hit! No one can guess that the main ingredient is crackers! I do Cut back on the mayo, I only use 1 cup.
    Its also delish "day two"!
    It was good except for the fact that all the mayo made it very rich! I think next time i will only use a cup of mayo.
    This is one of the best salads for summer! Great flavor. I prefer a bit less mayo and onion and left out the egg. Bacon bits sprinkled on top add a nice flavor as well. Love the crunchy, salty taste. Great with fish or chicken. One of our most used salads in the hot Georgia summer!
    I wasn't too sure about this recipe until I tried it. Now I am a BELIEVER. This is superb! I included a stalk of finely chopped celery since I had it available. Just excellent!!
    I tired this recipe and just love the taste. I share it with my Aunt and my friends and all of them love it.
    I made this for my book club. We read Paula's book, and I made recipes from it. Her book adds shrimp to the recipe. very good addition, couldn't imagine the salad without em' The salad was a hit with the club. Good salad. Just a bit too much Mayo. I would reduce the mayo by a 3rd if I made this again.
    I thought what is she doing when I watched Paula Dean make this. I called my mother in law to see if she had ever heard of it. Well we make it and loved it. Its a great vegan salad and so light and filling. A must try for everyone.

    I made Georgia Cracker Salad three times this week for three different supper parties and it earned rave reviews at each one! Delicious! And sooo easy!
    This is a good quick substitute to potato salad. I adjusted the ingredients slightly and added less mayo, used two tomatoes, two eggs, a little mustard, and a dash of dill.
    My brother tried this out on us one day and we loved it! It's been a family favorite ever since.
