Ingredients
- 1 sleeve saltine crackers
- 1 large tomato, finely chopped
- 3 green onions, finely chopped
- 1 1/2 cups mayonnaise
- 1 hard boiled egg, finely chopped
- Salt
- Freshly ground black pepper
Directions
In a medium size bowl, coarsely crush the crackers with your hands - you should have big cracker pieces. Add the remaining ingredients, mix well, and serve immediately. Season, to taste, with salt and pepper.

2 friends at work told me about this delish recipe. For over a YEAR I ignored their urgings to try thus pure awesomeness. THEY make it MONTHLY to share at their office lunch (I'm nit in their dept. So never got to taste this at those lunches. FINALLY, one of the ladies physically dragged me to their office frig and SHOVED a spoonful at me.
OMG my 11 year old & I have made this 3 times in 2 weeks now! In fact we add all ingredients together EXCEPT the crackers and let sit in frig overnight THEN the next day snap a sleeve of crackers into in and a big dollop more of mayo.
You'll never make potato salad again with all it's prepping time.
Even my neighbors and their 5 year daughter give this recipe "that's YUM" mommy!!
Don't be like me.... Don't wait a year to try this.
We all add an extra egg to ours. Add or takeaway more or less any of the ingredients you love after tasting it. "Dukes" brand mayo or Helman's really taste super with these ingredients!!!

I agree with the below post about when first made..not so good but after sitting in the fridge for a couple of hours and then just adding a few fresh crispy crackers it was really a good side dish for our brisket!!! oh and i did add two eggs instead of one and a dash of celery salt....

Most excellent! I substituted finely chopped Vidalia onions and quartered plumb tomatoes. I also increased the number of boiled eggs, tomatoes and mayonnaise in the recipe. Was still delicious two days later.
