Ingredients

  • 1 sleeve saltine crackers
  • 1 large tomato, finely chopped
  • 3 green onions, finely chopped
  • 1 1/2 cups mayonnaise
  • 1 hard boiled egg, finely chopped
  • Salt
  • Freshly ground black pepper

Directions

In a medium size bowl, coarsely crush the crackers with your hands - you should have big cracker pieces. Add the remaining ingredients, mix well, and serve immediately. Season, to taste, with salt and pepper.

    I have been making this salad since the first time I saw the recipe on Paula's show...I believe 2004. It's always the first... salad bowl emptied on the table. I am having a baby shower for my granddaughter next month and that is the one thing she requested at the luncheon. Chopped red or yellow peppers and shrimp is a nice addition but the original is wonderful just as it is. Read more

    I have made this salad many times and it is always a hit! No one can guess that the main ingredient is crackers! I do Cut... back on the mayo, I only use 1 cup. Its also delish "day two"! Read more

    This is one of the best salads for summer! Great flavor. I prefer a bit less mayo and onion and left out the egg. Bacon... bits sprinkled on top add a nice flavor as well. Love the crunchy, salty taste. Great with fish or chicken. One of our most used salads in the hot Georgia summer!Read more
