Ingredients

  • 1 sleeve saltine crackers
  • 1 large tomato, finely chopped
  • 3 green onions, finely chopped
  • 1 1/2 cups mayonnaise
  • 1 hard boiled egg, finely chopped
  • Salt
  • Freshly ground black pepper

Directions

In a medium size bowl, coarsely crush the crackers with your hands - you should have big cracker pieces. Add the remaining ingredients, mix well, and serve immediately. Season, to taste, with salt and pepper.

    I just had this salad at Paula Deen's restaurant in Savannah. I had to ask our waitress the name of it so I could look it up as soon as we got home. YUM!!! Out to the grocery store now to make-up a batch:

    this was very good and very easy! I used Ritz and saltines because I didn't have enough saltines, I like it better with the Ritz! Yummy!!!
