    These cookies turned out wonderfully, I will make them again soon. You might want to make the balls a little smaller than 1" in diameter - they spread out pretty far while cooking.

    Made these tonight for the first time and am amazed at how easy they were, and how good they are! (I forgot add the baking soda, and they still came out good!I spent days last year baking gingerbread men, never again.

    Like others, I took them out of the oven at about 8 minutes. But I made mine pretty small, at 1 inch balls I had over 6 dozen. They continue cooking out of the oven and as they're cooling, so let the first batch cool so you know how long to bake the next one. And I'll use more ginger next time, up to about 1 1/2 teaspoons or so.

    For anyone with hand/arm/neck problems, the dough is super easy to work with - I used my hand mixer for all of it, no stirring needed.

    I rolled them in organic sugar from Trader Joe's that I just happened to have, the sugar crystals are bigger than normal and look extra special.

    I was looking for new Christmas cookie recipes and thought I'd try this one. They are easy to make and taste just like ginger snaps. Our family loves them! They are good comfort food when the weather is cold!

    I like the concept of making gingerbread but can never seem to get them to come out the way they are supposed to. This recipe was easy for me to do with my young kids and yet they still have the taste of gingerbread cookies I was looking for. It is definately a cookie I will be adding to my holiday treats every year.

    I've never been disappointed in any of your recipes, and this one is no exception. Just has to be the BEST ginger cookie I've ever had. So easy too make also. Thanks Paula, keep those goodies coming.

    Dough seemed wet so I added 1/4 cup more flour. They were so good my husband ate too many and made himself sick.

    I had a craving for ginger cookies and found this recipe online at my favorite recipe internet site. They were easy to make and came out super! Everyone in the family likes their spicy flavor and crunchy/chewy texture. I backed off on the time to 10 minutes to keep the inside a little chewy.

    I thought these were great, but I had to adjust the cooking time and temperature for some reason. I found that 325 degrees for about 8 minutes gave me perfectly done, slightly chewy cookies.

    GINGER COOKIES OR GINGER SNAP ARE MY FAVORITE SNACK. WHEN I SAW THE SHOW AND PAULA WAS MAKING HER GINGER COOKIES I WAS SO EXCITED. I COULD NOT BELIEVE IT WAS THAT EASY TO MAKE A GINGER COOKIE. I ALWAYS PURCHASED THEM FROM THE STORE. NOW THAT I HAVE THE RECIPE I WILL ALWAYS MAKE IT AT HOME.
