These cookies are so quick and easy to make. After they are cooked and you bite into them, they are soooo soft and yummy that you have to have one more!

These are so good I have to have them on hand all the time they are my daughters favorite as well as my grandsons. I make a double batch every week thanks for the best ginger cookies

Why Spice Cookie?, because it can be a spicy cookie depending on the type of ingredients used.
Use the unsulphured molasses. Sulphured molasses makes the cookie too sharp tasting.
Use a fresh powered ginger for a very gingery taste.
For a crisp cookie, store in an airtight container. For a moist chewy taste, don't seal.
The crisp cookie is a great dunker.
