    Wow a recipe that I don't like from Paula! These have way to much flour in them. They are also dull in flavor. However; the dough is very easy to work with. The icing tastes like confectioners sugar - very blah! These were a big disappointment!

    This was my first time making gingerbread cookies and I was a little nervous at first. This recipe turned out perfect! I am always so impressed with Paula's recipes and the fact that they turn out so well! These were really easy and taste delicious! They actually made a few more than stated which was fine with me! Thanks Paula!

    So, like others have suggested, I left out about a cup of flour. Other than that, the recipe is perfect! When I rolled them out I made them a little on the thick side and they stayed nice and soft after cooling. I did take them out just as they were beginning to brown though, any longer and they came out kinda crispy. Perfect flavor for me and really simple. Thanks Paula!!

    I made her Ginger cookies last week and was very pleased. So this week for a holiday party I decided to try this recipe. I was very disappointed. These cookies were very dry (too much flour and did not have nearly enough ginger and spice flavor. Sorry Paula... I was so worried about bringing these to the party I decided to whip up a batch of her Triple Chocolate Chip cookies to redeem myself. Now those cookies are excellent!!

    I've never made gingerbread cookies before, and I looked the recipe up here and read the reviews before I attempted. Some of the one and two star reviews had me doubting it, but this turned out great. On the other hand, I hate cooking with a recipe and rarely follow it exactly. Since the bad reviews mentioned the cookies being dry, I left out 3/4 cup of flour from the original mixing and added 2 tbsp of unsalted butter. I also don't have an electric mixer and I used real ginger rather than powdered ground ginger. I'd say the powdered ginger would be a little better than the old mortar and pestle method. It worked, but it was hard and my fiance keeps asking to suck on my finger.

    The dough did seem easier to roll out as more flour got into it from the counter. The cookies are a little...a leeeeeeeeeeeettttttle bit dry, but delicious. I think the best change to this recipe is to not roll them out to 1/8 inch, but more like 1/4 and to start checking them at 12 minutes instead of 15, leave out 3/4 cup of flour, and add about a quarter-stick of butter.

    I am not a chef, I work on tug boats, but I love to cook and studying cooking is a major habit of mine.

    I tend to read reviews before trying a recipe and I am so glad that I did with this recipe. Previous posters wrote that they used less flour and I did too. I used 2 3/4 cups flour and then added a little more. The dough was very easy to work with, rolled out nicely and the cookies are good. The cookies don't spread much--so you can place them fairly close together on the baking sheet.

    I did not use the icing recipe. I let my kids use icing tubes and m&m candies to decorate. The cookies are a bit overdecorated but the kids had a ball.
