I thought these were pretty good and fairly easy to do! I rolled the dough out a little thicker and used mini gingerbread men cookie cutters! My first attmept with gingerbread cookies and everyone in the office said it was a success!

LOVE! Love these cookies, think I made about 7-10 batches last Christmas between giving them as gifts and my husband eating all the rest : Permanent staple in this house for the Christmas season

The cookies are fabulous...I made them ahead of time and they were ready for decorating when my grandchildren arrived. Had a ball decorating them with the kids...now a family tradition with "Granny"! Cut another batch into snowflakes and decorated them with white and pale pale blue icing and took them to school. (I am a teacher. My co-workers and fellow foodies raved...even those who "usually don't like gingerbread." Thanks Paula and Food Network. Love ya

As always, Paula gave us a wonderful recipe! My daughter and I made these for Christmas goodies. I had read all of the reviews prior to making them and meant to cut back on the flour. However, once we got started cooking I forgot about the flour warning from other reviewers. As it turned out, once we had the dough out of the fridge it was very easy to work with and the cookies were not dry at all. We cut down the cooking time for our oven to about 15mins. Thanks Paula for the best gingerbread cookies I have ever had!

I read the other reviews before trying this but I decided to use the recipe as is and not skimp on the flour - or anything else. I am an experienced cook but don't know much about baking. This recipe came out perfect...exactly as you would want gingerbread cookies. Yum! Perhaps it is because I really creamed that sugar? Also, you have to work the dough so that the butter is fully incorporated - in a similar way to shortbread. I baked just a few cookies to test the bake time first... I did not want to waste the dough or the effort! 18 minutes was too long for my oven, so I baked the rest at 15 min and had the batch come out perfect.
A great recipe to try with the kids!

I have never made Gingerbread Cookies before. The process is a little long but totally worth it!. I suggest using serveral cookie pans at the same time, cooper
cookie cutters and sprinkle flour on each 1/2 cup ball. By doing these simple seggestiions the dough won't stick and the process will be a little easier.

My kids and I made this recipe as written and the dough was so dry and crumbly that we couldn't even roll it out. A REAL disappointment right before Christmas.

I followed the recipe and ended up with cookies that are dry and bland... Will try again with less flour and fresh ginger next time.
