Ingredients

Cake:

  • Butter, for greasing pan
  • 2 cups sugar
  • 3 eggs
  • 1 1/2 cups vegetable oil
  • 1/4 cup orange juice
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 3 cups peeled and finely chopped apples
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Sauce:

  • 1/2 cup (1 stick) butter
  • 1 cup sugar
  • 1/2 cup buttermilk
  • 1/2 teaspoon baking soda

Directions

Preheat the oven to 325 degrees F. Generously grease a tube pan.

For the cake: in a large bowl, combine the sugar, eggs, oil, orange juice, flour, baking soda, salt, cinnamon and vanilla extract; and mix well. Fold apples, coconut, and pecans into batter.

Pour the batter into the prepared pan and bake until a tester comes out clean, about 1 1/2 hours.

Shortly before the cake is done, make the sauce: Melt the butter in a large saucepan, stir in the sugar, buttermilk, and baking soda, and bring to a good rolling boil, stirring constantly. Boil for 1 minute. Pour the sauce over the hot cake in the pan as soon as you remove it from the oven. Let stand 1 hour, then turn out onto a rack to cool completely.

    Hands down the best apple cake ever

    I've never baked a bundt in my life, so when I made this cake I wanted to do it right. As it was baking I was afraid that 1... and half hours was too long but it came out tremendously good!!!!! The cake came out perfect. Next time I make it I'm going to cut down a little on the oil and add more coconut and chop the apple just a little bit bigger because I believe that chopping them into fine pieces was too small. I'm not changing anything else with this recipe. It was sooooo good, I'm addicted to it, ha haha. I'm going to make another for thanksgiving and I'm also going to serve it with a bit of vanilla ice cream, yum! Read more

    I was happily making this cake and the batter was so dense, when it said to "pour" it into the pan I knew I had messed up.... So, I added more buttermilk(about 1/2 to 3/4 C.). That's when I realized I hadn't put in the EGGS!! I added them and the batter was perfect. It baked up just the way it was supposed to and was dense and super moist. Made a beautiful cake. I refrigerated the leftover cake and we ate it for a week. Kept it's flavor and moistness. A keeper! Even though I made a major mistake. I pride myself on my baking skills, just goes to show you, anyone can make a mistake, but with this cake it didn't matter. Read more

    This apple cake is great for breakfast, a snack or dressed up for dessert. It freezes and stores well. I was hesitant not... creaming the oil and sugar, but Paula's recipe comes out perfectly. I make it without the sauce, in a 9X13 pan for 1 hr 15 min. It brings out the flavor of the apples. For dessert, it is perfect with some sour cream on it. We are very fortunate to have Food Network -- all of the chefs - Paula, Rachael Ray, the Diners show, Emeril -- such good quality recipes and entertaining shows. Recipes like this, and having the Food Network available, improve our "quality of life" in this economy.Read more
