Ingredients

Cake:

  • Butter, for greasing pan
  • 2 cups sugar
  • 3 eggs
  • 1 1/2 cups vegetable oil
  • 1/4 cup orange juice
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 3 cups peeled and finely chopped apples
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Sauce:

  • 1/2 cup (1 stick) butter
  • 1 cup sugar
  • 1/2 cup buttermilk
  • 1/2 teaspoon baking soda

Directions

Preheat the oven to 325 degrees F. Generously grease a tube pan.

For the cake: in a large bowl, combine the sugar, eggs, oil, orange juice, flour, baking soda, salt, cinnamon and vanilla extract; and mix well. Fold apples, coconut, and pecans into batter.

Pour the batter into the prepared pan and bake until a tester comes out clean, about 1 1/2 hours.

Shortly before the cake is done, make the sauce: Melt the butter in a large saucepan, stir in the sugar, buttermilk, and baking soda, and bring to a good rolling boil, stirring constantly. Boil for 1 minute. Pour the sauce over the hot cake in the pan as soon as you remove it from the oven. Let stand 1 hour, then turn out onto a rack to cool completely.

    Delicious, but even better with a few tweaks...

    I've made this cake many times and have made several changes which I think make it better, and a little (just a little)... healthier. 1) Reduce oil by half and use 3/4 cups lowfat buttermilk to replace remaining oil 2) Increase salt to 1 teaspoon - - it really enhances all of the other flavors 3) Substitute a cup of golden raisins for the coconut (I have some coconut haters) 4) Instead of the sauce, make a glaze out of confectioners sugar, rum and OJ. Much less greasy and the rum flavor is delicious. Use the same way as you would the sauce - - pour over the hot cake as soon as it comes out of the oven but poke some holes in the cake with a skewer so that it can really penetrate. Other than that, it's a great cake and gets even more delicious and moist as the days go by. Read more

    I have no idea why people are saying this cake is good. This cake was dry and not sweet and not much flavvor to it. I made... this cake for a dinner party and it was not good. The guests didn't like it either. This cake was not cheap to make so with all the ingredients it took to make it I was not happy. The cake is made with oil and no butter so there is not much flavor to the cake itself. Read more

    Apple cake doesn't get any better than this cake recipe. Paula -- you're the best! I have made this cake three times and it... just gets better! My husband and kids fight over the last piece. I took it to Bunkco the other night and I left with a VERY small wedge of cake -- it was a hit! It does take a long time to make -- but definately worth the time and effort. Just make sure to use a large bundt/tube cake pan (I used an angel food cake pan). I do add about a half cup more diced apples (that way I can tell everyone they're getting a healthy fruit serving for the day!) Read more

    This has become my "go to" cake. I always use this cake for social functions. Guests ALWAYS love this cake. It gets rave... revues. The only thing I did differently was to butter & flour my bundt pan. It makes the cake easier to come out of the pan.     Too much sugar?

    I took recipes from 5 different apple cakes to create my own for Thanksgiving. As an avid runner, I too watch my calories.... With that said, has anyone bothered to take into account the girth of the cake itself? Two cups of sugar is menial in comparison to the size of the cake. Also, if it's too sweet, it might be the vanilla addition. If you really don't want as much sugar, use a sweeter apple like golden delicious.
