Ingredients

Cake:

  • Butter, for greasing pan
  • 2 cups sugar
  • 3 eggs
  • 1 1/2 cups vegetable oil
  • 1/4 cup orange juice
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 3 cups peeled and finely chopped apples
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Sauce:

  • 1/2 cup (1 stick) butter
  • 1 cup sugar
  • 1/2 cup buttermilk
  • 1/2 teaspoon baking soda

Directions

Preheat the oven to 325 degrees F. Generously grease a tube pan.

For the cake: in a large bowl, combine the sugar, eggs, oil, orange juice, flour, baking soda, salt, cinnamon and vanilla extract; and mix well. Fold apples, coconut, and pecans into batter.

Pour the batter into the prepared pan and bake until a tester comes out clean, about 1 1/2 hours.

Shortly before the cake is done, make the sauce: Melt the butter in a large saucepan, stir in the sugar, buttermilk, and baking soda, and bring to a good rolling boil, stirring constantly. Boil for 1 minute. Pour the sauce over the hot cake in the pan as soon as you remove it from the oven. Let stand 1 hour, then turn out onto a rack to cool completely.

    This apple cake is great for breakfast, a snack or dressed up for dessert. It freezes and stores well. I was hesitant not... creaming the oil and sugar, but Paula's recipe comes out perfectly. I make it without the sauce, in a 9X13 pan for 1 hr 15 min. It brings out the flavor of the apples. For dessert, it is perfect with some sour cream on it. We are very fortunate to have Food Network -- all of the chefs - Paula, Rachael Ray, the Diners show, Emeril -- such good quality recipes and entertaining shows. Recipes like this, and having the Food Network available, improve our "quality of life" in this economy.Read more

    I have been making this cake for the past 3 years for a bake sale. It's always the first to go and this year I had to bake... two cakes. I've made this in a 9 X 13 pan but I think it works much better in a bundt pan and it's prettier in a bundt pan. I've uses Jonathan apples and Granny Smith. This is by far, my favorite cake.     I have to admit that I did not read the reviews prior to baking this delicious cake....assured that if it was Paula Deen's... recipe it would be great, and sure enough it was! I followed the recipe to a T! Did not cut down on sugar, or substitute anything. Sure, it had a lot of sugar, but it was well worth it, plus I'm not the diet type of girl. I will gladly get up 6am and hit the gym for an hour and a half every morning, but skimp of food, or deprive myself of delicious Paula Deen recipes no chance. So thank you, Paula Deen for giving me the opportunity to make another of your delicious recipes, and once again get raving reviews from my family!
