For Sharon, who hates coconut - toast your coconut before you add it to the batter. This way, the texture will be crispy, not mealy, and the taste will be deeper and I think you'll like it. Like the top of a coconut macaroon, it is darker and crunchier! I also toasted my pecans - I know there was no need to, but I love the flavor of toasted nuts. This was a wonderful cake just tasting the batter as I went along. I will let others taste it today, and will get back here with their comments, too. Also, since buttermilk gives me the creeps--because everytime I buy it, it is separated and looks so unappetizing, I made a rum and maple glaze. Happy Apple cake eating!

I have made this cake several times and every time it was a hit. To Sharon, my daughter hates the taste of coconut, but she ate the heck out of this cake. It comes out so moist and that sauce sends it over the top!! Thanks again Paula, you're the best.

I simply don't understand why someone would use a box mix to review this recipe???????!!! Too stupid. This cake has been a huge hit whenever I've made it. If people don't know how to bake, they shouldn't criticize others. This cake is wonderful!!!! Not a crumb left whenever I've made it. Stop substituting! Just read and follow the directions. It will be perfect.

I used a packaged spice cake mix, replacing the` water with orange juice. It worked wonderfully well. Served with a dollop of whipped cream it was delicious.

This cake was...exceptional. very moist with rich flavours. i was very reluctant to add the butter-laden sauce at the end, so finally ended up using a rum-maple syrup sauce. a very generous half cup of rum (or maybe it was a 3/4 cup with a couple of table spoons of maple syrup, only because i wasn't sure whether the cake would be sweet enough. it did its job! the end product was moist and the flavours deepened well after a few days.

I love this cake, as is. it is to die for! My friends and family members request it when we have gatherings. It's very easy, moist and yummy! and smells wonderful while it's baking.
