    YUMMY!!! MY now husband showed up with this cake for our second date after having called me to see if I liked apples. He now makes this for me every year at the end of October. This cake is a keeper, delicious and moist

    I changed it up a bit. I put caramel sauce on the bottome of a pan. Put down a layer of apples. The batter I cut out 1/2 the oil and replaced with plain low fat greek yogurt. I Placed walnuts on the top, so no matter which way you did into this cake it is yummy.

    This cake is very good, but it is VERY sweet. With all of the sugar in the cake, and the additional sugar in the glaze, it was a little too much. With that being said, with the sugar adjusted, I could certainly see making this many times in the future! I cut the ingredients in half and baked it in a loaf pan for about 1 hour 15 minutes, which turned out well. Give this a try [just cut down the sugar!]

    This is the very best cake, never mind apple cake, I've ever enjoyed! Moist without being mushy, flavor-full, rich. It's a marvellous event cake, everyone loves it.

    This cake bakes up very nicely and is indeed a very moist cake, but I wasn't thrilled with the overall flavor of the actual cake - the glaze add quite a bit of sweetness, but I think I would have preferred no glaze and a more flavorful cake. The cake stays moist for many days.

    Crazy Good! It's very rich and I wanted to serve it as a breakfast cake so I made the following alterations: instead of 2 c. white sugar: 1 c white sugar, 1 c brown sugar, instead of 3 c. flour: 2 c all-purpose flour, 1 c oatmeal, no pecans or coconut, zest of one orange instead. I didn't peel the apples and did a regular chop - there were about 4 1/2 c apples. Proceed as directed. I didn't make the sauce (though it's very yummy! and made a lighter more "breakfasty" sauce from 1 c plain Greek yogurt, 1/4-1/3 c honey, and 1/2 - 1 tsp Chinese 5 Spice powder. Served this on the side. Rave reviews & gobbled down in no time.
