    I made this last night to taste test it before I brought it to a friend's house next weekend, and I am glad I did !! Did not enjoy this cake at all. It reminded me of eating bread pudding. I couldn't even taste the apples and if it didn't have the buttermilk sauce, it probably wouldn't have had much flavor at all. Very disappointed - this is on my list of items NOT to make anymore along with the lemon blossoms.

    Moist & delicious - tastes better the next day. And the next :- .... Keeps well in the fridge. It's a pretty dense cake; also sweet, but the sweetness of the apples probably has something to do with it too. Cut down on the sugar a little bit if your apples are sweet. Also try regular shredded coconut instead of sweetened. The cinnamon & the buttermilk glaze do help to cut the sweetness a little bit. The glaze didn't want to soak all the way down into the hot cake, so I took a sharp knife & loosened the cake a little bit from the sides & the middle of the pan so the glaze would run down there. Worked beautifully. This recipe is definitely going into my permanent collection!

    Paula dean... Need I say more? Shes amazing and so is this cake. I left out the coconut and pecans because my family is picky. Make this cake! You will not be sorry :

    OMG! This is my new favorite cake, right up there with carrot cake. When I read through the recipe I wasnt sure about the coconut, wasnt sure about the glaze, but OMG this is the best! Shared it with friends and they all said the same thing. I read some of the comments saying it was too sweet. It is a sweet cake of which I am not usually a fan, but this was the bomb! It does take a bit to get the glaze to absorb but it was worth the wait. And easy to make too!

    This is a super-yummy, melt-in-your-mouth, delicious and unforgettable recipe that I baked yesterday, 07/09/2011! I love this cake! Superb! And an easy one to work with. Ergo, my cake was a winner! I brought it @ my church's hospitality after mass this morning and it was an instant hit! In fact, it finished first in the list! Everyone asked about this recipe and I linked them to this site. Amazing! To help absorb the glaze, I used my GOOD COOK pen-like thermometer to poke the cake. That did the trick! Try this recipe, no regrets! Only non-stop serving. LOL!

    I just made this and it was delish!! I poked holes across the top of the cake with a fork and when I poured the sauce over it, it absorbed into the cake like a sponge. The result was a super moist cake (almost like the consistency of lava cake I loved it and had already filed this one away as a keeper!

    Paula's done it again! All I have to say is, when fall comes around and you're provided with the best apples of the year, MAKE THIS DISH. You will not regret it. I make it every autumn, and last year, I accidentally overcooked the glaze--boom! Yummy caramel sauce! Love. It.
