this is an amazing cake! the first carrot cake i have ever tried to make.. everyone that tried it said it was the best they had ever had! but i didnt use the parchment paper. also i added a couple handfuls of golden raisens and it didnt seem to cook as long as the recipe suggested... so just keep an eye on it about 10 mins before its ready

This cake was a HUGE hit!
I used some orange zest and orange juice in the frosting and everybody wanted the recipe.

I have made this cake several times for my family for the holidays. I am making it again for Christmas this year. Everyone loves it and the cake is actually very easy to make! Follow Paula's instructions on this cake and there is NO WAY it will fail.

u really dont have to because things dont really stick to parchment paper, but if u wanted to take the extra precaution, you could lightly grease and u might want to test out the recipe first before you serve it to a large group of people. (im not saying the recipe is bad, i havent tried it yet. i hope this helps

This thanksgiving my daughter, who is too busy to cook anything other than tacos, made this carrot cake especially for me. It was simply too good for words. I was sooooo pleased.

Disclaimer: I have not tried the recipe yet!!
I see in the recipe to grease and flour the pans and then add parchment paper.. do you grease the paper also?? I doing my first cake for the family for Christmas yikes!!! Wish me luck!!

To the person that said the cake was to oily you didn't do something right. Mine came out perfect the only things were you need the wax paper in the bottom of the pans cause i didn't have any and it was alot of work getting the cakes out .I only had two 9 inch cake pans didn't have batter left after filling the 2 pans .Also i only cooked my cake for 30 mins not the 40 it would have been way to done if i had left it in the oven but all ovens are diff so watch cake after 28 mins start checking ever 2mins

i have made Carrot Cake before, but none was evera s good as this!!!!! The frosting recipe was absolutely perfect!!! Honestly this was the easiest cake i have ever made!!!!! Lots and lots of compliments!!!!

This is an amazing cake! I made this for my husband's birthday and he loved it. I caught him sneaking back for seconds....thirds...our whole family enjoyed it very much. I have to disagree with some that say the frosting overwhelmed the cake. The combination between the cake and frosting was just right. I had a lot of frosting left over, so maybe I wasn't as generous with the frosting as others. Again wonderful Carrot Cake!
