    To the person that said the cake was to oily you didn't do something right. Mine came out perfect the only things were you need the wax paper in the bottom of the pans cause i didn't have any and it was alot of work getting the cakes out .I only had two 9 inch cake pans didn't have batter left after filling the 2 pans .Also i only cooked my cake for 30 mins not the 40 it would have been way to done if i had left it in the oven but all ovens are diff so watch cake after 28 mins start checking ever 2mins

    i have made Carrot Cake before, but none was evera s good as this!!!!! The frosting recipe was absolutely perfect!!! Honestly this was the easiest cake i have ever made!!!!! Lots and lots of compliments!!!!

    This is an amazing cake! I made this for my husband's birthday and he loved it. I caught him sneaking back for seconds....thirds...our whole family enjoyed it very much. I have to disagree with some that say the frosting overwhelmed the cake. The combination between the cake and frosting was just right. I had a lot of frosting left over, so maybe I wasn't as generous with the frosting as others. Again wonderful Carrot Cake!

    My husband has been moaning for years about how wonderful his grandmother's carrot cake was, but unfortunately, she passed away when he was still a child. His mom doesn't have the recipe, so we've been going from restaurant to restaurant trying to find an acceptable substitute.

    Our anniversary was coming up and I decided that since Paula Deen has the best recipes ever, why wouldn't she have one for a great carrot cake? I made it while he was at work and surprised him with it. He LOVED it! Said it was the best carrot cake he's ever had, and that "this is how carrot cakes SHOULD taste!" Even went so far as to tell me that he loved his grandmother's cake, but he loooooved mine! So, it's a hit and definitely a keeper. Looks like I know what I'll be giving him for our anniversaries from now on! :

    I made this cake for my Diabetic Mom's 65th brirthday and swaped out all the sugar for splenda. She LOVED it, my also diabitic Aunt tried it and loved it to. For a non splenda eater i thought it was good but was not used to the after taste. I would highly recommend this for anyone that loves carrot cake diabetic or not

    My mother-in-law is a chocaholic so for her to put this up there with my chocolate torte and chocolate with chocolate cake says it all! I am making this for my father-in-law this weekend. EVERYONE loved it. I am going to try to add a little nutmeg this time.

    I made this cake with a few adjustments to make it a little healthier. Instead of 1 1/2 cups oil, I used 3/4 cups oil and 3/4 cup applesauce. I also used self rising flour and omitted the baking powder. For the frosting, I used low fat cream cheese. My husband and father loved this cake because it was fresh and very moist.

    O.K., to the person who said this cake was too oily, try again! You must have done something wrong or did not bake it long enough. I made this cake last night for my husband's 40th birthday.... AWESOME! Thank you Paula Deen for an affordable and delicious recipe. We are seriously broke and other carrot cake recipes required too many ingredients that I just couldn't afford. I had a lot of these ingredients already in my refrigerator, not only was this recipe cost effective, simple really is better, my husband adored it! Hugs Paula Deen, you rock!

    This cake came out amazing! The only thing that I changed was that I used 1 teapsoon baking powder and 1 teaspoon baking soda.
