I have made this cake twice and it was a HUGE hit both times. The first time I shredded the carrots and I think I packed the measuring cup too full. It was still very good but I think too much carrot. I also cooked it the whole 40 minutes. It was slightly dry, but better the next day.
The second time I shredded the carrots and then chopped the shreds up for a finer carrot piece and lightly packed the cups. I also did not cook the whole 40 minutes. At 30 minutes I started checking for doneness and took the cakes out as soon as they tested done. It was perfect the second time.
I used my own cream cheese frosting reciep which is different than Paula's. This cake is perfection and I won't be hunting for another recipe. This was great the first day I made it and even better the next day.

Oh my Great Goodness..... I have made this cake a couple of times now and it has been a great success every time. Pay attention to the instructions and measurements. Also – strongly suggest that you use parchment paper to line your cake tins. It makes it so much easier. This will definitely be a keeper.

This carrot cake was my very first carrot cake I made from scratch. It turned out great. I made it for my boyfriend's birthday and he loved it! His only complaint was the icing. He doesn't like icing, so next time I'll make the cake in a 9 X 12 pan with light icing, but said the cake was delicious. Great recipe (without pineapple and raisins! Definitely a cake I'll continue to make.

Wonderful. Easy to make and super moist. I was a quarter cup short of the oil so I used coconut. Interesting spin to it!

I love this carrot cake. I made this for an event at my Church and my friend the pastors wife said this was the only cake she wanted for her birthday ever again! It was delicious!! This is the only recipe I use now.

I love this recipe. My husband said it was the best carrot cake he had ever tried. I love that the recipe does not call for raisins (which I HATE. I made in a 9x13" pan instead of as a layer and it came out great. Had to adjust the cooking time a bit though. I will try the suggestion of another reviewer and reduce the sugar a bit to try to lighten it up just a little. Thanks Paula and Grandma Hier. If you love a moist cake... This is the recipe for you!

SO DELICIOUS... first time i made this cake and it was amazing! My mom and grandma looked at me like i was some kind of goddess when they took their first bite :D the only things i changed in the recipe was the amount of sugar in the cake to 1 1/2 cups because the frosting already had a pound of confectionary sugar in it! I also added a little more cinnamon and for my own touch put in a little more than a 1/4 teaspoon of nutmeg. WOW words cant even describe this cake, you're just going to have to try it yourself. It's super easy, I'm 16 and i love to bake so if i can do it so can you! :
