This has to be one of the best carrot cake's I've ever eaten! The reason? First off this cake is sooo simple and traditional! It's a CARROT cake, meaning its soo good it doesnt need raisans (which I personally am not a fan of and other things such as pinnaple! Even though I am a nut fan and these pecans give this cake an even greater texture, this cake doesnt even need them to be delicious! I followed the recipe EXACTLY with the alteration of the cooking time. I did follow a reviewers advice and checked my cake at 245 mins of cooking and zi only really needed to cook it a minute or so more before it came out clean!

This cake was easy and tasty. I used 1 1/2 cups of sugar instead of two and it was still a little sweet for me. I will also add a bit my carrots for a stronger carrot flavor. My favorite was the cheese cream topping.
Everyone raved about how good it was. I will definitely save this recipe.

First off i love carrot cake. But this has to be the worst one i've ever had. Its very very oily and very bland. The carrots and cinnamon were lost in the oil and batter.

Made this for my mom's birthday back in April. My mom and everybody else there just loved this cake. Will be making it again. I just made it in a 9x13 pan, floured the bottom and put some parchment paper in the bottom. When I took it out of the oven it just fell right out of the pan and let it cool.

I did try this receipe twice with half the measurements and it was very yummy also the cake remained fresh for quite a long period.The sugar that I Added was little more than 1/2 cup otherwise it could be very sweet.

I used about 3/4 the amount of oil that the recipe called for, and it was just enough. Delicious cake! It was a big hit at our dinner party!
