Ingredients

  • Salt and pepper, for seasoning chicken
  • Crisco shortening, for frying
  • 3 eggs
  • 1/3 cup water
  • 2 cups self-rising flour
  • 1 teaspoon black pepper
  • 1 (2 1/2 pound) chicken, cut into pieces

Directions

Heat shortening in a cast iron skillet to 350 degrees F.

Beat eggs with water in a small bowl. In a shallow bowl, season flour with pepper. Dip chicken pieces in egg mixture and then coat well in flour mixture. Carefully add to hot shortening, in batches if necessary, place lid on top of skillet, and fry until brown and crisp. Remember that dark meat requires a longer cooking time (about 13 to 14 minutes, compared to 8 to 10 minutes for white meat.)

    Based on some others' comments, I added a bit of seasoning to the flour, I wish I had added more. However, the chicken came... out great, and this was much easier than deep frying. I'll definitely use this technique again. I also didn't use a cast iron pan (a really heavy skillet instead) and I friied in vegetable oil rather than Crisco. Based on what I know about Crisco, you'd be much better off using lard than that. (Google it.) Read more

    My grandmother taught me how to raise, butcher, and cook chicken. She has been long gone from cooking in the farmhouse... kitchen and I have long forgotten the "essence" of cast iron fried chicken due to trying to eat healthier over the years.     I Guess I just can't make Fried Chicken.

    I love fried chicken but as an above average cook, I have never been able to master it. I thought this recipe, which is so... simple, would be the answer. I watched the video 3 times. My chicken turned out tough and my gravy had no flavor and was very flour tasting. I wish she would have exponded on her recipe just how much flour to add. I cooked halved breasts and followed her recipe to a T. Where is the salt? It also took much longer then 8 to 10 minutes for my breasts to come up to 180 degrees, which is what is recommended for poultry. I guess I will keep going to KFC for my fried chicken.Read more
