    I MADE THISFRIED CHICKEN FOR EASTER WITH BISCUTS,COLESLAW,MASHED POTATOES. PAN GRAVY AND MORE ..AND NOW IT IS A TRADITION AND THE FAMILY CALLS AND MAKES SURE THAT THIS IS THE MENU...A VERY HUGE HIT...I DO ADD A LITTLE PARSLEY AND ONION SALT TO FLOUR..

    l did not see paula preparing the recipe, can anyone explain what the steaming part of the chicken is all about, want to try the recipe, but since this part has been left out of the recipe, l don't want to make it and then be disappointed! can anyone help. thanks catherine

    To Beth. from Schwenksville, PA, in your review from 5/8/2006, you wrote, "When Paula took a bite of this chicken on her show, her eyes welled up with tears. I understand that impulse entirely--this chicken was just SO GOOD." Where is your heart? Her eyes welled up with tears because she was remembering her beloved grandmother, not because the chicken was good. She even said so, that preparing their recipes brought back the loved-ones we have lost. I understand THAT impulse entirely, as I prepare recipes from my great-aunt and father, both wonderful cooks and both gone much too soon. Preparing their recipes, or even just reading them, and enjoying the dish brings them right back into my kitchen. I recognized Paula's heartache immediately and wished I could have given her a hug right then and there, and not because the chicken was good.

    One of my favorite comfort foods is fried chicken and mashed potatoes and I've been craving this for awhile. While watching you (Ms. Paula I noticed that the chicken seemed to be pre-seasoned before the pieces were put into the egg wash and then the flour dredge. Also I didn't see a mention of a buttermilk and hot sauce over night soak prior to prep and cooking. Maybe you where just keeping true to and honoring your family recipe. (I did miss the first part of the show. But I am in the process of the "soak" and I'll follow the rest of your recipe when it comes time to fry. I'll let you know how it all turns out and will most likely change my rating. Love you and your show!

    This is a luscious fried chicken recipe. Very worthwhile to give a try. It's also very easy to add a few seasonings that your family is fond of to the flouring process.

    I must agree though with the previous reviewer in that the recipe Food Network posted as being incomplete. She's right, there is no instruction for the actual covering and steaming of the chicken which is a very important aspect to the recipe. Also, Paul prepared the pan gravy from the drippings and no instructions were given for that step either. Whoever posts these recipes needs to pay much closer attention to these details. If a viewer hadn't seen the preparation or isn't used to making a pan gravy, they wouldn't know how (if they've never made a pan fried/steamed chicken before.

    I had never heard of 'steaming' frying chicken before and had to give this a try and this is THE only way chicken should ever be fried on top of the stove!
    The breast pieces are super moist and tender! Absolutely delicious!!
    Everyone must try this!

    I don't want to penalize Paula because of the Food Network's mistake. Paula clearly goes into detail on the show about putting the top on the pan and steaming the chicken till it's done. However, nowhere in the recipe is this mentioned. If you didn't see the show, you wouldn't know anything about it. This is not the first time Food Network has done this. It actually happens all the time. Whoever is in charge of Quality Control should be fired.

    Finally, a fried chicken recipe that comes out great every time. Crunchy outside, fully cooked but still moist and tender inside. This recipe makes me want to have fried chicken more often. Thanks Paula.
