When I was a child, my mother made a Red Velvet Cake at Christmas, and my sister and I thought it was the most special kind of cake of all. I've never made one until last week, when I decided to try Paula's recipe. Oh my. This recipe makes a perfect, melt-in-your-mouth cake. I made two 9-inch layers instead of three 8-inch, and also made a simple but decadent cream cheese frosting. This recipe is a true keeper. Planning to surprise my sister in May with this cake on her birthday.

This is a dense , rich and absolutely delicious cake...only problem i had with the cake is when it cooled how it pulled from the sides of the tin...i used a basic cream cheese frosting which was excellent accompaniment......will make again... thanks paula!!

To all those complaining that this recipe does not list how/when to use the butter..........you might want to read the first line. It says to cream the butter and sugar.

One of the best cakes I have ever tasted. It will be my wedding cake and my little sister will except no other cake for her birthday EVERY year since the first time I made it 3 or 4 years ago. I use a basic cream cheese frosting cause Im not a fan of marshmellow or coconut

It tasted really great, however the cake itself didn't rise much. I didn't use a box of confectioners sugar i only used half and it was perfect.

I could tell by the batter this cake was going to be great! I made cupcakes and my only complaint is that the wrappers pulled away from the cupcakes and don't look very pretty. The frosting is good, but on the sweet side. I used marshmallow fluff instead of melting marshmallows and waiting for them to cool.

I've made this cake before, but for my daughter's 9th B-Day, she requested these be made in cupcake form to share with her classroom. She also requested a buttercream frosting, so I made Gale Gands Quick Vanillacream frosting and it is also amazing!
I have never had such a more tender and delicious cake. Thanks for another wonderful recipe!!!
P.S. I happened to find Paula Deen cupcake wrappers at michaels in their dollar section and they match the colors in the red velvet cake perfectly, another plus!

DELICIOUS! Not too sweet, moist as a sponge and flavorful! I made one for Valentine's day at my office and received 3 requests to make it again that week!
