    I lived 10 years in the south from Arkansas to Charelston SC and this is a truly authentic Red Velvet Cake recipe. It proudly uses butter!!

    I have spent the better part of today, the day before Easter, putting this cake together for my son-in-law. I followed each step religiously and when the layers came out of the oven they were only about 1/2" high. The batter was so runny, it is unusable. I re-read the cake recipe only to find that the butter had been left out of the INSTRUCTIONS - apparently it has since been revised, I had run off a copy in May of 2005. Nowhere in the mixing process was the butter mentioned. I have wasted my day, to say nothing of the expense - just the red food coloring is costly - and now I have to go buy a cake at the store because I don't have any time left to bake!!!!!!!! What a major disappointment. This is the second Paula recipe that I won't try again!

    I made this for my sister's birthday, and we just loved it.

    The melted marshmallows are a little hard to integrate into the frosting, but it's worth it! It was so light and fluffy.

    The only change I made was to toast the coconut and pecans, and put them only between the layers, but that was mostly so I could decorate it with purple flowers. :

    this recipe took a long time to make, a lot of money on ingredients and it was not good at all. I made it for christmas eve dinner and had to thro it all in the garbage. i am not a novice baker..........(not an expert either but i would say dont waste your time with this one.
