A fix for the complaints about the dry...
Hi Paula, I love your shows. My mouth waters just listening to you talk while you are cooking. I have not tried the Red Velvet Cake yet, but I plan to very soon. I do know that when I have made cakes in the past, I put a large box of jello pudding mix in my cake(just the dry pudding mix). Those cakes came out so moist and good. I thougt this might help the ones that thought it was dry. Your show and Guy's are the only one's besides Robin Miller's that I watch. Lula Hall Reidsville NC

i had made red velvet cup cake from recipe that i had found on this website titled "red velvet cupcakes" i agree dont make them, they are entirely too floury tasting and perhaps just a tad too much oil. i was very disappointed. red velvet cake is my favorite too, this was my first time making it. I really cant wait to make this one though it sounds just too good!

To Keep cake from Sliding....
To Gina and Lori... The best way to keep a cake from sliding is to square up your layers. Buy a wire cake layer slicer, use it to level each layer (I usually find the shortest layer, and then keep the same setting for slicing the other layers). That way, each layer is the same thickness! When you use it, put the cake layer pan side down..that way you are cutting off the rounded top. When you stack the cake....no sliding and it will look awesome!!!

To the yuck, yuck yuck person..... I would imagine your mother is a bad baker! This recipe is great! Some people just don't know how to bake/cook or finesse the ingredients to suit. which is what she must have done, badly.

Red Velvet Awesome Cake!
I made this recipe for my family around Christmas and everyone who tried it loved it! My husband had 3 slices he thought it was so good. It is a bit rich so have lots of milk handy, but I also make this in cupcake form so 1 cupcake is just right. PLEASE do not search under "red velvet cupcakes" to make them, as the recipe on there is HORRIBLE and oily (must be a huge typo to call for so much oil)...just stick with this one and you can't go wrong.

Fair Cake
First, the good news: I love the frosting. It's sweet and fluffy and it makes plenty. Do not worry about skimping on the layers to make the frosting last--you may more than enough. I did melt my own marshmallows, but marshmallow fluff would have been much easier. Do include the marshmallows, however, because they give the frosting a very unique taste. Next, the not-so-good news: The cake is very dense and rather dry. It tastes fine, although I did add just a dash more cocoa (after all, you need a little more to get in your RDA of chocolate); however, the cake is just dry. The frosting helps moisten it up a bit, but I'd rather a fluffier cake. I wonder if a self-rising flour instead of cake flour might help, but I don't know. Overall, my family liked the cake, so they'd call it a success--I think I just had higher expectations.

My mother made this cake for Christmas. It looked great. But that is where it ended. It was so dense that you could barely cut it. The icing was so sweet that one taste and I thought I would be sick. I ate half a slice (trying to be polite)and was left with a stomach ache. Not a single guest ate the party finished their slice. Unfortunately, the party conversation after that was how horrible this cake was. It went into the trash. I LOVE red velvet cake and was extremely disappointed with this one. NEVER AGAIN.

I LOVED this cake! I was a bit worried at first after I read all the negative reviews but trusting Paula as I do (because every recipe I have made of hers has turned out wonderful and my family loves them) I followed this one to the letter and it turned out beautiful!! I needed a special cake for my daughter's 16th birthday and her favorite is Red Velvet. I had never made a homemade Red Velvet cake before but always loved the ones my Grandma use to make for Christmas every year. I could not get a hold of my Grandma so I trusted Paula instead! It was beautiful!! Deep Red and very moist make sure that the butter is softened so that it will cream beautifully with the sugar that is my one suggestion. I had no problems at all. Use toothpicks to hold the layers together (a trick I learned from my Grandma :o) ) I did not use the icing however because my daughter does not like coconut. I did use the Cream cheese/powdered sugar recipe and it was wonderful. Just follow the recipe and you will have a wonderful cake. I didn't even bother trying a different kind of food coloring other than Mccormicks. It did not make a differnce in the taste. Enjoy!! Once again Paula did a wonderful job!

Great Cake!!!!!
I am not sure what some of the other people did when preparing this cake, but this is one of the best cakes I have ever made. I ate a red velvet cake at one my husband's Christmas parties and I was determined to make one. This recipe is easy and tasty. I don't use the frosting, I have my own cream cheese frosting recipe. I have made this recipe 3 different times and everyone loves the cake. I have even used it to make cupcakes for my daughter's Christmas party at school. What a hit with some green sprinkles on the icing. All of my friends and family comment on how moist it is and how it melts in your mouth. I have even gotten requests to make it for a couple of my friend's birthday cakes! Thanks Paula for another great recipe!

Not The Best Red Velvet Cake
This cake had so many reviews that were possitive I decided I would try it. My mom has made red velvet cakes from scratch for many years and people have paid her big bucks to make one for them because they are so good. I didn't realize this cake didn't call for oil or shortning untill I started mixing ingredients. I couldn't believe it! So I didn't add any oil since it didn't call for any. The cake was dry! It tasted ok, it was just dry. I guess I'm so use to my mom's cake being so moist and fluffy that this cake was a dissapointment. I should have known when it didn't call for oil.

This cake is moist and delicious! If you add 1/2 cup more of sugar and it makes the cake a little sweeter. I have gotten rave reviews from family members and co-workers alike. I will keep this recipe and use it often in the future.

I really love the cake and the icing is something else. I did add 3 tlbs of cocoa powder and just a little over a cup of buttermilk and it was to die for. My daughter loves it and is constantly asking for me to make it. GREAT Recipe!!!!!!!!!!!!

PERFECT!
I've always wanted to attempt to bake a cake from scratch and thought I would attempt one of the most difficult southern cakes known. I followed the recipe step by step, omitting the coconut from the frosting. The cake came out perfect. It was moist and I got rave reviews from my coworkers who are known to be brutally honest. I will be making this cake two more times before the holiday's are over.

tasted like flour
I followed this recipe and the cake ended up having a wierd flour taste. I even used tasteless food coloring. Nobody liked it and It will have to go in the trash. I cook/bake frequently and I am not sure what went wrong. The icing was okay but my husband prefers a cooked whipped cream icing on his red velvet cake.

the person that said you were disapointed about the red velvet cake from Emeril, You must have done something wrong,Because I have made this cake several times and there is a big big following in my group with this cake. It gets very great reviews from everyone that it is served to. maybe you should try it again.

Gone in a flash!!
I made this cake for a friend's birthday. Everyone loved it!! Sometimes Paula's cakes are too sweet but this one was perfect! I doubled the recpie but only used 2oz of red food coloring. It was more than enough. Melting marshmallows was a sticky mess--next time I will definitely use store bought marshmallow fluff. I will make this cake again. It was awesome!

To keep your cake from sliding....
Gina, Next time you make a layer cake, put toothpicks into the cake straight down through the layers. It holds them in place, and it's fun to see who gets one in their cake slice later. My mother always said that whoever got the toothpick had to do the dishes--although I don't think she ever followed through on that.
