This cake was very different - it wasn't a typical chocolate cake. Defiantly a great recipe to try if you're looking for something really out of the ordinary.

I have now made this cake about 5 times and even turned it into filled cupcakes this last time. We have tons of fresh grapefruit from our yard so this recipe makes THE most wonderful, light, refreshing cake I've ever had. It has turned into a fast favorite of my friends and family. It is wonderful to pair with champagne or a light white wine. When I did cupcakes the recipe actually came out to 13 cupcakes, an odd number so next time I may be tempted to double the recipe and freeze some. I also want to try making mini cupcakes with it and see how many it makes.

The process is really easy. There are several steps but it's not complicated. For filling the cupcakes it was really easy. Just take a small paring knife and carefully cut out a hole at the top of the cupcake. Then spoon in a dollop of the frosting, then spread the entire cupcake with it.

Try it, you'll love it! Cake or cupcake form you will love it.

I made this for my hubby's birthday several years ago. I'm not a huge grapefruit fan, but I thought this was surprisingly delicious! The cake didn't rise too high, but it tasted great. (... I still haven't used the cream of tartar since...

While I managed to salvage this cake, I ran into an unexpected problem. It took forever for the center of the cake to cook. I took it out because it looked cooked, but it was not. I had never had a problem like this and I bake quite a bit. What could have caused this??

I never heard of grapefruit cake and thought it would be fun to meke. Took half to work and everyone that tried it liked it. I made her pumpkin cake last week and got praises on it. Am anxious to make the pink lemonade cake for Easter.

I ate this cake often at the Brown Derby- and have made the original recipe from the Brown Derby cookbook for my daughter's birthday every other year for 30+ yrs To simplify, I now just use a white or yellow cake mix, add aTab or 2 of lemon then make the cream cheese and grapefruit frosting. I use about a can and a half of the well drained grapefruit sections between the layers and on top. Enjoy a rerun of Lucy and grapefruit cake with milk - yum!

The cake tasted good & the icing did too. My only complaint was that the icing was a little less dense than I like. I might go a little light on the juice next time. It's got that great tart/sweet combination that my husband & I love!

I saw the cake Food Network show about Disney World and was so excited when I found this recipe. I followed it to the letter and out came to hard fisbees that taste like cardboard/cornbread. I was so disappointed. I've found another link for a recipe so I guess I'll try that one instead.

Thank you Paula. This cake turned out as close as I'll ever get to the luscious grapefruit cake I used to order years ago at the Hollywood Brown Derby.
